2015-2019年扬州市食源性致病微生物监测结果分析

摘    要:目的 了解扬州市食品中致病微生物的污染状况,为食品安全的防控工作提供数据支撑。方法 根据《江苏省食品中微生物及其致病因子监测工作手册》,2015-2019年在扬州市6个县市区进行食品样本的采集,并按其标准操作程序进行相关致病微生物的检测。结果 5年共监测16大类1658份食品样本,其中7类106份食品样本检出致病微生物,阳性率为6.39%。共检出9种112株致病微生物,其中副溶血性弧菌、蜡样芽胞杆菌检出率较高,分别为13.84%、9.76% ;粮食制品、水产品及其制品中的致病微生物检出率较高,分别为33.33%和16.67%。公共场所、农贸市场、超市的食品致病微生物污染较严重,检出率分别为16.67%、13.59%、7.07%。结论 扬州市粮食制品、水产品及其制品中的致病微生物污染较为严重,公共场所的直饮水及农贸市场售卖的食品易受致病微生物的污染。

Surveillance results of food-borne pathogenic microorganisms in Yangzhou, 2015-2019

Abstract:Objective To understand the contamination status of pathogenic microorganisms in food in Yangzhou City and to provide data support for food safety prevention and control. [WTHZ]Methods According to the workbook for Monitoring of Microorganisms and Pathogenic Factors in Food in Jiangsu Province, food samples were collected in 6 counties in Yangzhou from 2015 to 2019, and related pathogenic microorganisms were detected in accordance with its standard operating procedures. [WTHZ]Results A total of 1658 food samples of 16 categories were monitored in 5 years, of which 106 food samples of 7 categories were detected with pathogenic microorganisms, and the positive rate was 6.39%. A total of 112 pathogenic microorganisms of 9 species were detected, including Vibrio parahaemolyticus and Bacilluscereus had high detection rates, 13.84% and 9.76% respectively.The detection rate of pathogenic microorganisms in cereal products, aquatic products and their products is relatively high, 33.33% and 16.67%, respectively. The contamination of food pathogenic microorganisms in public places, farmer’s markets, and supermarkets is serious, and the detection rates are 16.67%, 13.59%, and 7.07%, respectively. [WTHZ]Conclusion The contamination of pathogenic microorganisms in grain products, aquatic products and their products in Yangzhou is relatively serious. The direct drinking water in public places and the food sold in the farmer’s market are susceptible to contamination by pathogenic microorganisms.
