摘    要:目的 了解干预前后包头市高校餐厅从业人员营养知识、态度和行为的差异,探寻对相关人群行之有效的营养教育方法.方法 自行设计问卷对332名包头市本科院校餐厅从业者进行普查,再从中整群抽取102名进行营养教育干预,并进行干预后效果评价.结果 被试人群营养知识水平普遍偏低,营养教育干预后营养基础知识及营养与相关疾病知识知晓率均提高,与干预前差异均有统计学意义(P值均<0.01);该人群在干预后较干预前,对营养知识感兴趣的人数明显增多(P<0.01);在饮食行为方面,干预后得分升高,与干预前差异有统计学意义(P<0.01).多因素分析发现,营养知识、学历、工种与饮食行为得分均呈正相关(P值均<0.05).结论 营养教育可提高高校餐厅从业人员的营养知识水平,改善营养态度,使不良饮食行为得到一定的转变.

Efficacy of nutrition education among the university dining employees in Baotou city

Abstract:Objective To know the differences of nutrition KAP before and after the intervention among the university dining employees in Baotou city and to explore effective methods of nutrition education.Methods A cross-sectional survey was conducted by questionnaire,the baseline survey used the census method,treatment group was chosen by the cluster sampling method and evaluated effects after nutrition education.Results The level of nutritional knowledge was generally low for the university dining employees.After nutrition education,awareness of nutrition basis knowledge and the related disease knowledge were increasing than before intervention,which was statistically significant(P<0.01).In addition,nutrition attitude improves and the number of people interested in nutrition knowledge was increasing significantly(P<0.01).In the dietary behavior,dietary behavior score was more increasing than before intervention,which was statistically significant(P<0.01).Multivariate analysis also found that dietary behavior scores were positively related to nutrition knowledge,education and type of work.Conclusion Nutrition education can increase university diet of employees’ nutrition knowledge level,improve nutrition attitude and transform bad dietary behavior.
