微生物对蜂花粉质量影响的研究

摘    要:本文报道了对国内47个地区的部分蜂花粉(Bee Pollen)的菌落总数,大肠菌群数和致病菌(乙型链球菌、沙门氏菌、葡萄球菌)的检测结果。结果表明:这些蜂花粉每克含有的菌落总数在几千至几千万个之间。但多数为非病源性微生物。所检蜂花粉的大肠菌群数,有92.3%小于500个/100g;均未检出致病菌。同时提示:蜂花粉的氨基酸含量同微生物的数量并没有绝对的负相关性;其营养价值和质量用多个指标综合评价更为客观。而花粉的含水量、贮存温度对微生物的生长有关系。

Abstract:The paper reports the results that the aerobic bacterial count, coliform bacteria and pathogenic organisms(Streptococcus hemolyticus, Solmonella and Staphylococcus aureus)were detected in 15 sorts of the bee pollen in 47 areas at home. The experimental results may be summarized as follows; 1. The aerobic bacterial count is between thousands and tens of millions in each gram of the bee pollen, but most of them are not pathogenic microorganisms. 2. The number of coliform bacteria is less then 500 in 100 grams of the bee pollen. It occupys 92.3% of the bee pollen detected. 3. The number of amino acid hasn't negative interrelation with the microbe in the bee pollen. The nutritive value and the quality of the bee pollen appra sed with many indices are more objective. 4. The water content and the storage temperature of the bee pollen have positive interrelation with the growth of microbe in the bee pollen.
