摘    要:摘要:目的 应用流行病学方法,对某企业一起菜豆引起暴发食源性急性胃肠炎的原因进行调查分析,旨在为预防类似的事件再次发生。方法 将有共同饮食史者进行个案调查,并通过病人病例对照研究分析危险因素。结果 本次事件发病28人,罹患率9.39%,临床症状以恶心、呕吐为主,无发热,平均潜伏期3.0 h,暴露危险因素为食用刀豆炒肉片食品。结论 根据流行病学调查以及病例对照研究、结合病人临床症状,确认此次事件为一起刀豆加工不当造成的中毒事件。

Abstract:Abstract: Objective To analyze the cause of foodborne outbreaks of acute gastroenteritis, to prevent similar incidents from happening again. Methods Patients with a history of common diet with the patients were included in the control group for case control study. Results There were 28 cases with the incidence rate of 9.39%. Clinical symptoms were nausea, vomiting, fever, an average of 3.0 h incubation period, and the risk factors were the sword bean fried meat foods. Conclusion According to the epidemiological investigation and case control studies, combining with the patients clinical symptoms, we confirmed the poisoning was caused by wrong sword bean processing together.
