摘    要:摘要:目的 了解漯河市畜产品中铅、镉、总汞的污染状况,为食品安全风险评估提供依据。方法 采集漯河市肉、肝肾、蛋、乳4类畜产品共102份样品,对重金属铅、镉、总汞进行检测。结果 4年中监测的102份样品中重金属污染物铅、镉、总汞的总体检出率为61.8%,总体超标率为1.6%,连续4年总体检出率差异有统计学意义(χ2=6.88,P<0.05),总体超标率差异有统计学意义(χ2=9.44,P<0.05)。铅、镉、总汞3种重金属污染物中以铅的超标率和检出率为最高,分别达到了48.0%和3.9%,铅、镉、总汞的检出率差异无统计学意义(χ2=11.59,P>0.05),超标率差异无统计学意义(χ2=5.21,P>0.05)。不同种类畜产品中肝肾类食品污染物检出率为最高,达到了100.0%,超标率最高的为肉类食品,超标率为2.9%,检出率差异无统计学意义(χ2=9.22,P>0.05),超标率差异无统计学意义(χ2=1.90,P>0.05)。监测的部分肉类食品出现铅、镉2种污染物联合超标现象。结论 漯河市畜产品总体质量是好的,但部分畜产品存在一定的安全隐患,建议监管部门强化监管,确保畜产品质量安全。

Abstract:Abstract: Objective To know the contamination status of the lead, cadmium and total mercury in animal by-products of Luohe City, so as to provide the evidences for food safety risk assessments. Methods We collected 102 samples including four types of animal products with meat, liver, kidney, eggs and milk, and detected lead, cadmium and total mercury. Results Among the 102 samples during four years, the overall detection rate of lead, cadmium and total mercury was 61.8%, and the over-limit rate of lead, cadmium and total mercury was 1.6%. There was statistical significance in the overall detection rate (χ2=6.88, P<0.05), and the same to the over-limit rate (χ2=9.44, P<0.05). Among the overall detection rate and over-limit rate of lead, cadmium and total mercury, both of lead were the highest, 48.0% and 3.9% respectively. There wasn't statistical significance in the detection rate (χ2=11.59, P>0.05) of lead, cadmium and total mercury, and the same to the over-limit rate (χ2=5.21, P>0.05). Among the different kinds of animal products, the detection rate of liver and kidney was highest, which reached to 100%. The over-limit rate of meat was highest, which reached to 2.9%. There was no statistical significance in the detection rate (χ2=9.22, P>0.05), the same to the over-limit rate (χ2=1.90, P>0.05). There existed the phenomenon that lead and cadmium in part of animal products excessed at the same time. Conclusion The overall quality of the animal products of Luohe City is good, but there exist certain security problems in the part of animal products. Regulators should strengthen the supervision in order to ensure the safety quality of animal products.
