佛山市禅城区2004~2005年部分餐饮单位食(饮)具消毒检测结果分析

摘    要:[目的]了解佛山市禅城区餐饮业食(饮)具消毒卫生状况。[方法]对2004-2005年餐饮单位食(饮)具卫生检测资料进行分析。[结果]2004~2005年共抽检样品70105份,合格的62615份,合格率为89.32%。2年间合格率的差异有统计学意义(P〈0.01),不同消毒类型单位食(饮)具合格率的差异有统计学意义(P〈0.01),不同消毒方法消毒的食(饮)具合格率的差异有统计学意义(P〈0.01),各类食(饮)具合格率的差异有统计学意义(P〈0.01)。[结论]重点加强小型餐饮单位食(饮)具监督监测工作。

Abstract:[Objective]To understand the sanitary situation of tableware in Chancheng district in Foshan from 2004 to 2005,in order to put forward countermeasures for sanitary supervision.[Methods]To analyze the tableware's sanitary monitoring data of some catering enterprises in Chancheng district.[Results]70 105 samples were tested in 2 years among which 62 615 were qualified,the total qualified rate was 89.32% with no significant differences between two years (P<0.01).There were significant differences for qualified rates between different catering enterprises (P<0.01),between different disinfection methods and between different kinds of tableware (P<0.01),and there were significant differences for qualified rates of tableware (P<0.01).[Conclusion]Supervision should be strengthened on the tableware disinfection of small catering enterprises.
