饮食业单核细胞增生性李斯特菌污染状况分析

摘    要:目的]了解饮食业冷藏设备及食品中单核细胞增生性李斯特菌的污染情况,为制订预防措施提供依据.方法]采集53家饮食经营单位冷藏食物及冰箱冷藏室内表面涂抹拭子共293份样本,按国标法分离鉴定.结果]冷藏室内表面涂抹拭子200份样本,单增李斯特特菌检出阳性率为4.00%.3类冷藏食品共93份样本,阳性率为3.23%结论]饮食业冰箱及食品存在交叉污染,控制冷藏温度可有效防止单增李斯特菌污染.

Abstract:Objective] To investigate the contamination of L.monocytogenes in refrigerators and chilled tood, and to provide basis for preventing and controlling the food-borne diseases brought by L.monocytogenes. Methods ] 293 samples collected from refrigerator container and chilled food in restaurants were detected. Results] Among the 200 refrigerator container samples and 93 food samples, L.M positive rates were 4.00% and 3.23% respectively. Conclusion] Cross infection was detected between refrigerator container and food and the contamination of L.monocytogenes could be prevented by effective refrigerators thermoregulation.
