摘    要:目的更好地管理铁路沿线伙食团的食品安全卫生工作。方法运用HACCP基本原理方法。结果铁路沿线伙食团的食品管理制度、从业人员、原料采购、清洗消毒、食品加工等方面都有明显改善。结论运用HACCP基本原理方法对铁路沿线伙食团开展食品安全卫生管理能够取得显著效果。

Discussion on the Food Safety and Hygiene Management of Restaurants along the Railway by Applying HACCP

Abstract:Objective To manage the food safety and hygiene of restaurants along the railway better.Methods To apply the basic principles and method of HACCP.Results There was obvious improvement in food management system,practitioners,procurement of raw materials, cleaning and disinfection,food processing of the restaurants along the railway.Conclusions The effect of management of food safety and hygiene of restaurants along the railway was obvious by applying the basic principles and method of HACCP.
