| 摘 要： | 目的]研究黑胡椒中胡椒碱的提取工艺。方法]采用正交试验，以胡椒碱的提取率作为评价指标，对黑胡椒中胡椒碱提取工艺进行优化。结论]所考察的各因素中，黑胡椒的提取工艺各因素的影响程度为：乙醇浓度〉提取时间〉溶剂倍数，最佳水平搭配为A3B1C2。
