2006年德州市德城区食(饮)具消毒状况调查

摘    要:[目的]了解德州市德城区食(饮)具消毒状况。[方法]2006年7~8月对德州市德城区126家餐厅的食(饮)具消毒设施进行了检查,并抽取部分食(饮)具进行大肠菌群检测。[结果]126家餐厅中,有蒸汽消毒柜的5家,有电子消毒柜、保洁设施完备的65家,采用煮沸消毒的33家,采用药物消毒的23家。食(饮)具合格率79.66%(615/772)。不同类型餐厅食(饮)具、不同消毒方法消毒的食(饮)具、各类食(饮)具间的消毒合格率差异有统计学意义(P<0.01)。[结论]中小型餐厅食(饮)具消毒状况较差,是今后监督监测工作的重点。

Abstract:[Objective]To explore the disinfectant condition of tableware in Decheng District,Dezhou city.[Methods]Disinfectant facilities of tableware in 126 dining halls were examined in Decheng District from July to August 2006.Coli group was detected for some tableware samples.[Results]Among the 126 dining halls,there were steaming sterilizers in 5 dining halls,65 dining halls had electronic sterilizer and cleaning facilities completing,33 dining halls had boiling disinfection facility,23 dining halls sterilized with drugs.79.66% of the tableware were up to standard(615/772).There was a difference of the different tableware in different dining halls with different disinfection method and different qualified rate tablewares(P<0.01).[Conclusion]The disinfectant condition of tableware was relatively poor in middle and small dining halls which were the key to be inspected.
