多元化培训模式在军队疗养院炊管人员饮食安全培训中的应用

目的探讨多元化培训模式在军队疗养院炊管人员饮食安全知识、技能培训中的应用,为提高疗养院饮食安全管理水平提供参考。方法选取2016年4-6月在疗养灶工作的45名炊管人员,采用多元化培训模式进行饮食安全理论知识和卫生消毒技能培训,比较炊管人员培训前及培训3个月后饮食安全知识知晓率、消毒方法操作准确率和卫生工作质量与就餐人员满意度。结果多元化培训3个月后,炊管人员饮食安全理论知识和卫生消毒操作技能较培训前明显提高,差异有统计学意义(P0.01);卫生工作质量和就餐人员满意度较培训前提高,差异有统计学意义(P0.05)。结论对炊管人员进行多元化模式培训,可提高炊管人员食品安全意识和卫生消毒意识,规范工作习惯,提升饮食安全管理水平。

Application of Diverse Training Modes in Food Safety in Military Sanatoriums

Objective To explore the applicability of diverse training modes in the training of food safety knowledge and disinfection skills for cafeteria employees who served in military sanatoriums and to provide reference for improving food safety in sanatoriums.Methods A total of 45 cafeteria employees working in kitchens of sanatoriums between April and June 2016 were selected in the research.They received multi-mode training in knowledge of food safety and in disinfection skills.These employees 'knowledge of food safety,accuracy of performance of disinfection skills,quality of sanitation and the level of satisfaction of clients were compared after training of 3 months with those before training.Results There was significant change after 3 months of training (P＜0.01) as the amount of knowledge,operation skills,and quality of sanitation were improved greatly(P＜0.05),so was the rate of satisfaction with their work.Conclusion The employees' work concerning food safety can be greatly improved in diverse training modes and their awarenesss of food safety and disinfection can be enhanced obviously.
