绵阳城区2004~2008年餐饮业餐饮具消毒监测结果分析

摘    要:[目的]了解绵阳城区餐饮业餐饮具消毒质量情况,防止因餐饮具不洁引起食源性疾病,为加强餐饮业卫生监督管理提供依据。[方法]通过对绵阳城区2004~2008年餐饮业餐饮具消毒效果监测资料进行统计分析。[结果]绵阳城区2004~2008年共监测餐饮具174578件,总合格率为80.49%,餐饮具卫生消毒质量逐年上升,各年平均合格率分别为72.49%、78.62%、81.69%、82.99%和86.32%,5年间餐饮业餐饮具消毒合格率差异有统计学意义(χ2=2270.41,P﹤0.001);绵阳城区大型餐饮业餐饮具消毒效果明显高于中小型餐饮业,不同规模经营单位餐饮具消毒合格率差异有统计学意义(χ2=2665.91,P﹤0.001)。[结论]针对本市餐饮业餐饮具消毒现状,重点加强中小型餐饮业单位餐饮具消毒管理,采取综合措施进一步提高餐饮具消毒卫生质量,继续推行餐饮具集中消毒配送制度。

Abstract:[Objective] To understand and master the state of catering trade sterilization to prevent food origin disease due to the dirty dinnerware, so as to provide foundation for strengthening the management.
