摘    要:目的观察冷消毒在食品工业管道和储罐容器的消毒效果及其对产品的影响。方法采用现场消毒后对产品质量检测法,来评价消毒效果。结果用含量30mg/l的二氧化氯消毒液或过氧乙酸对食品加工管线进行循环消毒,消毒时间为20min。检测所消毒的管道生产的牛奶的理化指标全部合格,外观、口感和气味均正常,无细菌生长现象。用含量1300mg/L~2600mg/L二氧化氯或过氧乙酸消毒剂溶液现场对食品罐和发酵罐消毒处理后,检测细菌总数均<1cfu/cm2。结论食品加工管线和储存罐等容器用化学消毒剂进行冷消毒,可以达到良好的消毒效果,对产品质量无不良影响。

Abstract:Objective To observe the efficacy of cold disinfection in CIP (cleaning in place) and disinfection of the food industry pipeline and the tank vessel and the influence on the product. Methods The pipeline and the tank were disinfected on the spot, and then the product quality was examined to evaluate the disinfection efficacy. Results 30 mg /L chlorine dioxide disinfection solution or peracetic acid was used to disinfect the food processing pipeline cyclically for 20 min. After disinfection, examination of the milk produced in the disinfected pipeline found that all the physical and chemical indexes of the product were qualified, the appearance, taste and smell were normal, and there was no bacterium growth phenomenon. After disinfecting the food tank and fermentation tank with the disinfectant solution containing chlorine dioxide 1300~2600 mg/L or peracetic acid disinfection solution, the total bacteria count was <1 cfu/cm2. Conclusion Cold disinfection of the food processing pipelines, storage tanks and other containers with chemical disinfectant can achiev, good disinfection efficacy and has no adverse effect on the quality of products.
