淮扬菜系人群膳食营养与健康研究

摘    要:目的:研究淮扬菜系居民的膳食习惯,营养与人体健康的关系。方法:以食物频率法调查膳食习惯,常规方法进行体格检查,计算人均每日各种食物及营养素摄入量,用推荐摄入量(RNI)或适宜摄入量(AI)进行比较分析。结果:居民食物消费以大燮主食,每天均食用新鲜蔬菜,其中青菜摄入频率最高,能量和蛋白质摄入量分别为RNI的101.1%(男),115.%( 女)和98.8%(男),95.7%(女),多种维生素摄入不足及部分矿物质摄入不平衡,维生素C人均每日摄入量仅占RNI的35.1%,钙的摄入占RNI的36.6%和31.3%,体质指数(BMI)在正常范围的占63%,人群血清甘油三酯水平较高,超过正常范围的高达55.1%,结论:淮扬菜系地区居民膳食结构不尽合理,应提高膳食中维生素和钙的摄入量,减少高脂肪的摄入。

Abstract:Objective: To study the effects of dietary intake on health. Methods: A total of 54 couples were recruited as a territory-wide stratified random sample. The dietary survey data was collected using Food-frequency questionnaire and analyzed using a computerized nutrient database and SAS.The height, body weight, skinfold measurements, body mass index were completed on each participant. Fasting blood and urine samples were collected for biochemical analysis. Results:The characteristic of dietary pattern rely on grains, vegetables, especially on rice and green vegetables. Both males and females appeared to have adequate energy and protein intake, with 101.1%(M) and 115%(F) of recommended value for energy intake and 98.8%(M) and 95.5%(F) for protein intake. Vitamins intake of both males and females were below the recommendations, and the minerals intake was imbalance, among them, the average vitamin C intake was 35.11mg, it only covers 35.1% of recommended value; the calcium intake was only 36.6%(M) and 31.3%(F) of recommended value. Compared to the reference value (recommended by WHO); the body mass index of 68 individuals (63% of total) was within normal range, There were 59(55.1% of total) individuals have elevated blood triglyceride. Conclusion: Priority should be given to increase the intake of vitamin and calcium, and to reduce the intake of fat, that could make considerable improvements in public health within the population living in Huaiyang dietary pattern district.
