摘    要:目的:了解掌握2008年-2010年嘉兴市面制品中铝的污染状况。方法:对全市5个县(市、区)生产厂商和部分零售点114份的面制品进行铝的监测。结果:2008年-2010年我市面制品中铝的检出率分别为96.5%(110/114),与国家标准比较合格率分别为56.1%(64/114),合格样品主要集中在2009年下半年及2010年。结论:面制品中铝的污染情况形势依然严峻,应该继续深化传统加工工艺改革,增强推广力度、加强食品安全监管,并进行铝污染水平风险评估。

Abstract:Objective:To investigate the situation of aluminum pollution in flour-made food in Jiaxing city during 2008-2010.Methods: Survey tested aluminum was performed,114 foods were collected from five county.Results: The detection rate of aluminum was 96.5%(110/114).And the rate of qualified samples which met the national hygienic standard of aluminum in flour-made food was 56.1%(64/114).Conclusion: The situation of aluminum levels in flour-made food was although grim.We should continue deepen reform,and promote supervision and assess risks of Aluminum level in the food.
