江门市区食品中金黄色葡萄球菌污染状况及其耐药性

摘    要:目的了解江门市区12类食品中金黄色葡萄球菌(以下简称金葡菌)的污染和耐药状况,为防治金葡菌引起的食源性疾病提供科学依据。方法依据国标方法,并按《广东省食源性致病菌监测计划》检测技术的要求,对采集的食品样本进行金葡菌分离和生化鉴定,对结果作统计分析。结果从12类993份食品中,共检出金葡菌42株,阳性率为4.23%。其中以非定型包装熟肉中阳性率最高,为9.37%;其次是速冻熟制米面制品,阳性率为8.33%;凉拌菜、生禽肉、生羊肉、生牛肉、生猪肉、生食蔬菜和非发酵豆制品的阳性率分别为3.41%、3.33%、2.00%、1.82%、1.67%、1.14%,1.12%。在沙拉、牛奶和冰淇淋中均未检出金葡菌。检出金葡菌对17种抗生素出现了不同程度的耐药。结论江门市区食品中存在着金葡菌食物中毒的潜在危险,应加强非定型包装熟肉、速冻熟制米面制品等食品金葡菌污染的监测,金葡菌对多种药物的耐药性提示要安全使用治疗药物。

Abstract: Objective] To understand the pollution Status of staphylococcus anreus in 12 kinds of food in urban area of Jiangmen City, and provide scientific evidence for preventing and treating the food-borne diseases caused by staphylococcus aureus. Methods ] According to the methods of national standard, and following the requirements of testing technology from "The Program of Surveillance Food -borne Pathogens in Guangdong Province", the staphylococcus anreus in the samples were isolated and identi- fied biochemically, and the results were analyzed statistically. Results] Of 993 food samples of 12 categories, 42 stains of staphy- lococcus anreus were identified,with positive rate of 4.23%. Obviously, the highest of positive rate was 9.37% that was from the non-finalized packed cooked meat, followed by the frozen and cooked food products from rice and flour making, with the rate of 8. 33%. In other food samples, the positive rates of cold dishes, raw poultry, raw mutton, raw beef, raw pork, salad vegetables and non-fermented soy products, were 3.41%, 3.33%, 2.00%, 1.82%, 1.67%, 1.14%, and 1.12%, respectively. Staphy- lococcus anreus was not detected in salad, milk and ice-cream. Staphylococcus aureus was resistant to 17 antibiotics. Conclusion] A potential danger of staphylococcus aureus induced food poisoning exists in Jiangmen City. It is necessary to strengthen the monitoring of the Sstaphylococcus anreus pollution in some food products such as non-stereotyped packaged cooked meat, the frozen and cooked food products of rice and flour, staphylococcus aureus shows resistance to many kinds of antibiotics which suggests the safe use of therapeutic drugs.
