酵米面、银耳等食品中椰酵假单胞菌及其毒素的污染调查

摘    要:报告了1986~1987年全国21个省(市)、自治区酵米面、银耳、玉米及其它谷类食品中椰酵假单胞菌及其毒素的污染调查情况。共检测玉米、酵米面1 121件,其它谷类及制品236件,鲜银耳371件,干银耳264件。检出椰酵假单胞菌和米酵菌酸的阳性率依次为鲜银耳>其它谷类及制品>玉米和酵米面>干银耳。鲜银耳的检菌、检毒阳性率分别高达4.04%和8.21%。在被调查的21个省区内,以河南、四川的污染最严重。

Abstract:The investigation about contamination of Pseudomonas cocovenenanssubsp.farinofermentans in fermented corn flour, tremella, corn and o-ther cereals which were collected from 21 provinces in China during 1986to 1987 was reported in this paper. Samples included 1 121 of corn andfermentd corn flour, 236 of other cereals, 371 of fresh tremella and 264 of dried tremella.The positive detective rates of both bacteria and itstoxin (Bongkrekic acid)were arranged in the order as follows: fresh treme-lla>other cereals>corn and fermented corn flour>dried tremella.Therates of positive strains and toxin of fresh tremella were 4.04% and 8.21%respectively.Contaminated samples from Henan and Sichuan provinceswere much more than those from other provinces.
