摘    要:目的为掌握北京市顺义区奥运餐饮单位食源性致病菌的污染现况和动态变化趋势,降低奥运赛事期间食源性疾患的发生风险。方法2007年6月~2008年5月,对顺义区20家奥运相关重点餐饮单位直接人口食品进行食源性致病菌连续动态监测,包括凉拌莱、炝拌菜、沙拉、熟肉制品、生食或半生食水产品、冷加工糕点面包、爆炒菜、水果拼盘、鲜榨果蔬汁等9类食品进行9种致病菌监测,共监测食品样品1105件。结果23件样品检出致病菌,包括20件金黄色葡萄球菌和3件单增李斯特菌,检出致病菌和条件致病菌的有5种食品,即凉拌菜(含豆制品)、炝拌菜、沙拉、熟肉制品、冷加工糕点。结论奥运直接入口食品存在一定卫生安全隐患,通过规范冷荤间操作人员的食品制作过程、强化操作人员的卫生知识培训等一系列措施的实施,可以降低食源性疾患的发生风险。

Abstract:Objective To understand current status and dynamic change of contamination with food-born pathogen in catering units, in order to reduce risk of food-born disease and ensure food safety in Shunyi District during Beijing 2008 Olympic Games. Methods In total, 1 105 specimens of nine kinds of instantly-served food were collected and tested for nine kinds of pathogens from June 2007 to May 2008 in Shunyi District, including Chinese-style salad, western-style salad, cooked meat, raw aquatic products, bread, fresh fruits, fresh juice, etc. Results Pathogen was found in 23 specimens of five kinds of food, with an overall detection rate of 2.1 percent, including 20 strains of Staphylococcus aureus and three strains of Listeria monocytogenes. Conditional pathogen was detected in five kind of food, including salad, bean products, cooked meat, cakes, etc. Conclusion Certain hidden hygienic troubles still existed in some instantly-served food, but risk of food-born diseases can be reduced during Beijing 2008 Olympic Games through a series of measures, such as hygienic standardization of food processing, strengthening training of health knowledge for food handlers.
