摘    要:
烹调油烟气含有200多种有害气体。实验研究和流行病学调查表明:油烟气可损伤肺部功能,引起机体免疫功能下降,并具有致突变性和致癌性,是肿瘤发生的可疑因素。

Abstract:
Cooking oil fume contains more than 200 harmful gases. The method of experimental test and epidemiological investigation were used to study cooking oil fume. The results indicate that cooking oil fume could injure respiratory function and immunological function. Mutagenic and carcinogenic activity were shown in the cooking oil fume. Cooking oil fume is a doubtful factor of eausing cancer. It is necessary to study the effect of cooking oil fume on human health.
