摘    要:目的监测达州市主要食源性致病菌污染状况,确定本地区高危食品,为预防控制食源性疾病提供科学依据。方法按照国家食源性致病菌监测工作手册要求,多级分层抽样并按标准操作程序进行检测。结果 4年监测10大类食品975件,检出食源性致病菌7种99株,总检出率为10.15%。检出数较多的依次为金黄色葡萄球菌24株、单增李斯特菌20株、蜡样芽孢杆菌18株,检出率较高的依次为副溶血性弧菌25.00%、阪崎肠杆菌21.62%、蜡样芽孢杆菌14.40%。结论达州市食品存在食源性致病菌污染,其中婴幼儿配方食品、冷冻食品和动物性水产品是主要污染食品品种。

Abstract:Objective To study the pollution status of food-borne pathogens and determine the high risk foods in Dazhou, thus to provide scientific basis for the prevention and control of food-borne diseases. Methods According to the national work manual of surveillance on food-borne pathogens and based multistage stratified sampling, food samples were tested following the standard operation procedure. Results Ten kinds, 975 samples of foods during the 2009-2012 were tested, and 7 species, 99 strains were confirmed, with a total positive rate 10. 15%. The pathogens with most detected numbers were successively: 24 strains of staphylococcus aureus, 20 strains of Listeria and 18 strains of Bacillus cereus; the pathogens with highest detection rates were successively: Vibrio parahemolyticus, 25%; enterobacter sakazakii, 21.62% and Bacillus cereus, 14.40%. Conclusion Food-borne pathogens pollution exists in Dazhou city, mainly in infant formula food, frozen food and aquatic products.
