| 摘 要： | 目的]了解吕梁市离石区各类型餐饮业单位食(饮)具消毒情况,更好地加强餐饮业的食(饮)具消毒管理工作。方法]对2009年离石区432户大、中、小型餐饮单位的4286份食(饮)具消毒效果监测资料进行分析。结果]检测432户餐饮单位的食(饮)具4286份,合格的2700份,合格率为62.99%。检测合格率,大、中、小型单位分别为82.05%、75.88%、27.87%(P0.01);蒸汽、电子消毒柜、化学药物消毒的分别为87.90%、61.15%、50.15%(P0.01);有、无保洁措施的分别为80.86%、28.42%(P0.01);碗、盘子、筷子、杯子分别为71.44%、71.89%、42.39%、29.66%(P0.01)。结论]离石区餐饮单位食(饮)具消毒合格率较低。
