焦亚硫酸钠对半夏的质量影响研究

摘    要:目的研究半夏加工过程中添加焦亚硫酸钠对半夏药材质量的影响。方法在半夏加工过程中添加焦亚硫酸钠0~10 g/kg,共计9个梯度,分析焦亚硫酸钠对药材性状、总灰分、二氧化硫残留量、浸出物、有机酸含有量的影响。结果焦亚硫酸钠添加量小于0.4 g/kg时,对半夏性状、浸出物、总灰分、有机酸含有量均无显著性影响,二氧化硫残留量介于标准上下(150 mg/kg);当达到生产用量(5 g/kg)时,半夏浸出物和总灰分急剧增加,表面增白效果明显,二氧化硫残留量高达5200 mg/kg,严重超标,并且对有机酸成分的影响较大,总有机酸含有量呈上升趋势。结论半夏生产过程中过量添加焦亚硫酸钠会严重影响半夏的质量,导致二氧化硫残留量严重超标。因此,半夏加工过程中需掌控焦亚硫酸钠的使用量以保证其安全和质量。

Abstract:AIM To study the effects of sodium metabisulfite on the quality of Pinelliae Rhizoma during the processing. METHODS The adding of 0-10 g/kg sodium metabisulfite within 9 gradients totally during the processing,upon properties,total ash,residual sulfur dioxide,extracts and organic acids of Pinelliae Rhizoma were analyzed. RESULTS Sodium metabisulfite under dose of 0. 4 g/kg showed no significant effect on traits,extracts,total ash and contents of organic acids of Pinelliae Rhizoma,and had the residual amount of sulfur dioxide within a 150 mg/kg range off the standard. An addition of sodium metabisulfite up to 5 g/kg production dosage brought forth sharply increased extracts and total ash of Pinelliae Rhizoma,both of which were significantly or extremely significantly different from the blank. And in addition to its obvious whitening effect on the surface of Pinelliae Rhizoma,the resultant up to 5 200 mg/kg residual amount of sulfur dioxide,far exceeding the standard. Moreover,the influence on organic acids was great and the total content of organic acids was on the rise.CONCLUSION The quality of Pinelliae Rhizoma will be significantly affected due to excessive addition of sodium metabisulfite during the processing,as we get resultant seriously excessive sulfur dioxide residue in Pinelliae Rhizoma. Careful dosing of sodium metabisulfite during processing is suggested to ensure the safety and quality of Pinelliae Rhizoma.
