摘    要:目的:建立平菇多糖的含量测定方法,确定纤维素酶法提取平菇多糖的最佳工艺条件。方法:采用苯酚-硫酸法测定平菇多糖的含量。以平菇多糖得率为指标,考察酶解时间、酶解温度、pH值等3个因素对平菇多糖纤维素酶提取工艺的影响,采用响应面分析法优化工艺条件。结果:平菇多糖的最佳提取工艺条件为酶解时间135min、酶解温度49℃、pH5.30,在此条件下得率可达6.82%。结论该法成本低、产品得率高,比传统水提法提高3.98%。
