云南会泽县、陕西镇安县初中生营养与食品安全知、信、行现状研究

摘    要:目的了解云南与陕西贫困地区初中生的营养知识、态度和行为现状,分析其影响因素,为联合国教科文组织编写营养与食品安全教材提供信息,同时为今后开展中学生营养与食品安全教育干预提供依据。方法先采用随机抽样的方法,选取贫困地区两个贫困县云南会泽县与陕西镇安县,然后采用整群抽样的方法,2010年9月对两个贫困县的六所中学1 002名学生进行了营养与食品安全知识-态度-行为的问卷调查。结果目标学校的中学生营养与食品安全基础知识较为缺乏,平均得分为(7.51±3.43)分,答题正确率为41.7%±19.0%。态度方面,对接受营养与食品安全教育的态度较好,平均得分为(5.60±1.04)分,积极态度占的比例为80.0%±14.8%。但是营养与食品安全行为需要改善,目标学生的行为受到了多种因素的制约。经t检验和回归分析发现,是否留守(P<0.05)、年龄(P<0.05)是学生知识得分的影响因素。结论有必要给贫困县的学生开设较为系统的营养与食品安全课程,编写教材。

Investigation on the Status of Knowledge,Attitude and Behavior Towards Nutrition and Food Safety in Middle School Students in Huize County,Yunnan and Zhenan County,Shaanxi

Abstract:Objective To investigate the current status of knowledge,attitude and behavior towards nutrition and food safety in middle school students in poor areas of Yunnan and Shaanxi and analyze its influencing factors,so as to provide information for UNESCO to prepare educational materials on nutrition and food safety and to provide a basis for future intervention on nutrition and food safety education in middle school students.Methods Two counties in poverty-stricken areas,Huize County in Yunnan and Zhenan County in Shaanxi,were selected by random sampling.Then 1,002 students from six middle schools in these two counties were enrolled by cluster sampling in September 2010 and received questionnaire investigation on knowledge-attitude-behavior towards nutrition and food safety.Results The students of the target schools had poor knowledge of nutrition and food safety,with an average score of 7.51±3.43 and a correct answer rate of 41.7%±19.0%.They had good attitude towards nutrition and food safety education,with an average score of 5.60±1.04 and a positive attitude proportion of 80.0%±14.8%.However,their nutrition and food safety behaviors needed to be improved and their behaviors were restricted by a variety of factors.t-test and regression analysis found that being left-behind and age were the main influencing factors of the students’ knowledge score.Conclusions It is necessary to compile textbooks and set courses for systematic education on nutrition and food safety for the students in poverty-stricken counties.
