摘    要:目的 了解2014 - 2017年宁夏食品中铝污染的现状,为市场监管和食品安全风险分析提供参考,减少铝超标对人群的危害。方法 对宁夏地区2014 - 2017年的谷物及其制品、淀粉及淀粉类制品、即食海蜇、膨化食品、焙烤食品共5大类食品进行随机抽样,按GB/T5009.182 - 2003方法对样品进行检测。按GB2760 - 2014评价标准对检测结果进行分析评价。结果 不同类别食品中铝含量的检出情况不同。共检测食品319份,超标40份,超标率为12.54%。除焙烤食品中铝含量无超标外,即食海蜇中铝含量超标率最高,为90%(9/10);谷物及其制品中油条的铝含量超标率次之,为33.96%(18/53);淀粉及淀粉类制品、膨化食品的铝含量超标率依次为13.33%(6/45)、8.62%(5/58)。结论 宁夏地区市售食品中铝含量超标水平总体不高,但即食海蜇、油条中铝含量超标情况相对比较突出,建议加大监管力度和强度,保障食品安全。

Abstract:Objective The aim of this study was to assess the situation of aluminum pollution in some food products in Ningxia from 2014 to 2017, which will provide a reference for market regulation and food safety risk analysis, so as to reduce the harm of excessive aluminum consumption in the population. Methods Grains and their products, starch and starch products, ready-to-eat jellyfish, puffed food, and baked goods were randomly selected in Ningxia region from 2014 to 2017, and samples were tested according to GB/5009.182-2003 method. The test results were analyzed and evaluated by GB2760-2014. Results The detection rates of residual amount of aluminum additives in different food categories were different. In total, 319 food samples were tested and the exceeding standard rate was 12.54% (40/319). The aluminum content in baked goods was not exceeded. The exceeding standard rate of the aluminum content in ready-to-eat jellyfish was the highest (up to 90%, 9/10), followed by deep-fried dough sticks (33.96%, 18/53), starch and starch products (13.33%, 6/45) and puffed food (8.62%, 5/58). Conclusion Aluminum content in certain food sold was not high in Ningxia, but it was relatively high in ready-to-eat jellyfish and deep-fried dough sticks. We should strengthen the supervision to ensure the safety of food.
