摘    要:目的 调查武汉市干蘑菇样品中重金属铅、镉污染状况,并对监测结果进行分析评估。方法 根据随机抽样法采集武汉市干蘑菇样品共130件,根据国家标准方法检测其中重金属铅、镉的含量,并根据《中华人民共和国农业行业标准 绿色食品 食用菌》( NY/T 749-2018) 以及单因子污染指数法和综合因子污染指数法进行评价。结果 130件干蘑菇样品中重金属铅、镉检出率分别为93.8%、99.2%,超标率分别为0、3.85%;3种干蘑菇中金针菇镉污染状况较为严重,超标率差异有统计学意义(P=0.003);除金针菇为二级产品外,其他蘑菇均为一级产品。结论 武汉市售干蘑菇样品中铅污染较为轻微,香菇和茶树菇镉污染可控,但金针菇中镉污染较为严重,需要引起重视。

Abstract:Objective To investigate the contents of lead (Pb) and cadmium (Cd) in dried edible mushrooms from Wuhan city so as to evaluate their pollution status. Methods 130 samples of dried edible mushrooms were randomly collected from Wuhan city. Pb and Cd contents of samples were determined according to the national standard method and statistical analysis was applied to the test results. Based on the basic data of determination, an assessment of harmful element pollution was conducted by single factor pollution index and Nemerow pollution index methods, according to National Agriculture Standard Green Food-Edible mushroom (NY/T 749-2018). Results The total determined rates pf Pb and Cd were 93.8%, 99.2%, and the total over-standard rates were 0, 3.85%, respectively. The pollution of Cd in Flammulina velutipes was more serious between 3 kinds of edible mushrooms, while the over-standard rates were significantly different. Agrocybe aegerita and Letinous edodes were products belonging to grade 1 besides flammulina velutipes, which belonged to grade 2. Conclusion It is considered that pollution of Pb in dried edible mushrooms from Wuhan city is mild, Agrocybe aegerita and Letinous edodes are generally safe for Cd, but in Flammulina velutipes samples the pollution degree is higher. Therefore, more attentions should be paid to.
