2006年承德市春节市场食品卫生安全调查

[目的]了解承德市节日市场食品卫生安全情况,探讨食品卫生管理对策。[方法]对承德市22家食品经营单位卫生许可证、食品经营人员的健康证、卫生知识培训合格证、一般卫生问题及食品卫生状况进行现场调查,对销售的食品进行随机抽样。[结果]抽检的22家食品经营单位中,有2家未取得有效的卫生许可证,无证率9.09%。抽检的230名食品从业人员中,有47人无健康合格证、卫生知识培训合格证,无两证率20.43%。有43名食品从业人员未着工作服、未戴口罩、帽子从事食品经营活动,占18.69%。抽检的488份食品中,无厂址的89份,占18.24%;无保质期的144份,占28.89%;无生产日期的149份,占30.53%;变质的食品29份,占5.94%;未索取合格证的107份,占21.93%。[结论]承德市节日市场食品存在着不安全隐患,应加大食品卫生监督力度,确保节日市场食品卫生安全。

Investigation on Food Hygiene in the Market during Spring Festival in Chengde City in 2006

[Objective]To understand food hygiene in Chengde city during spring festival,explore measures for the management of food hygiene.[Methods]On-the-spot investigation was conducted on hygienic license,health certificate,training certificate on hygienic knowledge,status of food hygiene in 22 food businesses,shop food samples were randomly collected and tested.[Results]Of the 22 food businesses investigated,2 had no hygienic license,accounting for 9.09%.Of the 230 food employees investigated,47 had no health certificate and training certificate on hygienic knowledge,accounting for 20.43%.There were 23 food employees did not wear work clothes,mouth masks and hats during working,accounting for 18.69%.Of the 448 food samples investigated,89 of them had no address of food processing industry,accounting for 18.27%.144 food samples had no a period of validity,accounting for 28.89%.149 of them had no production date,accounting for 30.53%.29 food samples were deterioration,accounting for 5.94%.107 food samples investigated did not been asked for certificate of quality,accounting for 21.93%.[Conclusion]There was hidden trouble on food hygiene in the market during spring festival in Chengde city.Supervision and inspection on food hygiene must be strengthened to ensure safety food for consumers.
