昆山市餐饮业凉菜间卫生状况调查

摘    要:目的了解昆山市餐饮业凉菜间的卫生状况,对各型餐饮单位卫生状况进行比较。方法 2011年5-7月对65家有凉菜间的饭店进行卫生学调查,并随机抽取125份凉菜进行卫生学检验。结果中小型餐饮单位卫生管理不到位,小型餐饮单位卫生制度健全率为82%,中小型餐饮单位卫生设施齐全率在72%以下,紫外线灯设置合格率60%以下,凉菜间温度合格率仅为59%,凉菜检验合格率低于70%。结论昆山市部分中小餐饮单位凉菜间卫生状况不佳,大型餐饮单位好于中小型餐饮单位。建议严把许可关,推进量化分级制度实施,加强卫生知识培训,建立并完善自身管理制度,加强现场卫生监督和凉菜监测工作力度。
