摘    要:目的:了解食物中毒细菌污染情况并进行分析,为卫生监督监测提供依据。方法:对中毒事件中的各个环节进行采样,如消毒容器、剩余食物、病人呕吐物及腹泻物,进行细菌总数、大肠菌群数及潜在病原菌的测定。结果:25份食品样品中有19份检出副溶血性弧菌,未加热卤制品分离出梅氏弧菌和副溶血性弧菌,而加热过的卤菜中只分离出梅氏弧菌,所有样品均未检出其他致病菌。结论:五起食物中毒,其中一起由梅氏弧菌和副溶血弧菌混合污染食品而引起,其余四起均由副溶血性弧菌引起。食物中毒事件频发并非偶然,应加强卫生监督和相应技术指导,减少此类食物中毒事件的发生。

Abstract:Objective:To understand and analyze the bacterial pollution situation of food poisoning,so as to provide the basis for hygiene supervision and monitoring.Methods: All links of the food poisoning cases were sampled,such as sterilization container,food,the remaining patients vomit and diarrhea,and total bacterial count,coliform bacteria and potential pathogenic bacteria in these samples were determined.Results: In 25 food samples,19 samples were positive for Vibrio parahaemolyticus,unheated halogen products were found vibrio metschnikovii and Vibrio parahaemolyticus,and heated bittern dish were only found vibrio metschnikovii,all the samples were not detected other pathogenic bacteria.Conclusion: In five cases of food poisoning,one was caused by mixed pollution of Vibrio metschnikovii and Vibrio parahaemolyticus,the remaining four were induced by Vibrio parahaemolyticus.Food poisoning events did not happen by chance,the relevant departments should strengthen the sanitary supervision and technical guidance,reduce the food poisoning incident.
