2005~2007年淄博市周村区餐饮业公用食(饮)具消毒监测结果分析

摘    要:目的]了解餐饮业公用食(饮)具的卫生状况。方法]对2005~2007年周村区所辖餐饮单位公用食(饮)具消毒效果监测资料进行分析。结果]2005~2007年合计检测2 690家(次)餐饮单位的食(饮)具21 529份,合格的12 366份,合格率为57.43%,2005~2007年分别为56.76%、57.34%、58.02%(P0.05)。2005~2007年食(饮)具平均合格率,餐厅、制作室的分别为40.21%、64.37%(P0.01);1~4季度的分别为63.12%、45.09%、53.54%、67.68%(P0.01);大型、中型、小型餐饮单位分别为91.05%、50.36%、22.87%(P0.01);餐具、饮具合格率分别为58.96%、46.62%(P0.01)。结论]周村区餐饮业食(饮)具合格率较低,小型单位食(饮)具消毒存在较多问题。
