山东省花生中22种元素含量监测分析

摘    要:目的 调查研究山东省内花生中元素富集情况及存在的安全风险隐患。方法 采集山东省10个地市200份花生样品,依据《2020年国家食品污染物和有害因素风险监测工作手册》 规定的标准操作程序,对22种元素含量进行检测,并对结果进行统计学分析。结果 花生中11种元素检出率为100%,易富集的元素B、Ni、Co、Mo含量最大值分别为29.4、16.8、1.07和5.45 mg/kg,对人体有潜在毒性的Al、Li、Ba含量最大值分别为11.0、23.2、7.38 mg/kg。地域间比较,元素Zn、Fe、B、Ni、Mo、Li、Cd含量差异有统计学意义(t = - 3.395~2.668,P = 0.011~0.044)。品种间比较,元素Zn、Fe、Mn、B、Cu、Ni、Mo、Co、Li、Ba、Cd含量差异有统计学意义(t = 1.367~6.996,P = 0.002~0.037)。花生在富集元素时,16对元素正相关,1对元素负相关,有统计学意义(P<0.05)。结论 省内花生中22种元素有不同程度的富集,本研究可为花生的资源开发、质量控制以及安全风险的深入研究提供参考。

Abstract:Abstract: Objective To investigate the enrichment of peanuts in Shandong Province and the potential safety risks. Methods A total of 200 peanut samples were collected from 10 cities in Shandong Province. Based on the Manual of China National Food Contamination and Harmful Factors Risk Monitoring, 22 kinds of elements were determined, and statistical analysis of safety risk was conducted based on the monitoring results. Results The detection rate of 11 elements in peanuts was 100%,the maximum contents of B, Ni, Co and Mo which are easily enriched were 29.4 mg/kg, 16.8 mg/kg, 1.07 mg/kg and 5.45 mg/kg respectively, and the maximum contents of Al, Li and Ba which are potentially toxic to human body were 11.0 mg/kg, 23.2mg/kg and 7.38 mg/kg respectively. The contents of Zn, Fe, B, Ni, Mo, Li and Cd in different regions had significant difference (t=-3.395-2.668, P=0.011-0.044). The contents of Zn, Fe, Mn, B, Cu, Ni, Mo, Co, Li, Ba and Cd in different element contents among peanut varieties had statistically significant difference (t=1.367-6.996, P=0.002-0.037). When peanut enriched elements, 16 pairs of elements were positively correlated and 1 pair of elements was negatively correlated, with statistical significance (P<0.05). Conclusion Twenty-two elements were enriched in peanuts in the province to varied degrees, and this study can provide reference for resource development, quality control and in-depth study of safety risks of peanuts.
