延吉市朝鲜族和汉族老年人的膳食模式及食物摄入量调查

摘    要:[目的 ]了解延吉市朝鲜族和汉族老年人的膳食模式及食物摄入量 .[方法 ]随机选择 10 0 0名6 0岁以上的朝鲜族和汉族老年人进行问卷调查 ,从中又随机选择 2 0 0名老年人 ,用 2 4h回忆法进行膳食调查 .[结果 ]朝鲜族和汉族老年人 1日 3餐均以大米为主食 ,汉族老年人面食类摄入频率高于朝鲜族 ;在肉类的摄入方面 ,朝鲜族老年人以食入牛肉为主 ,汉族老年人以猪肉为主 ;汉族老年人植物油类的摄入量明显多于朝鲜族 ,且符合膳食指南要求 ,朝鲜族老年人植物油类的摄入量低于推荐量 ;朝鲜族和汉族老年人蔬菜摄入量明显低于推荐量 .[结论 ]延吉市朝鲜族和汉族老年人应在膳食中增加新鲜蔬菜的摄入量 ,此外朝鲜族老年人应同时增加脂肪的摄入量 .

Abstract:OBJECTIVETo investigate the situation of dietary pattern and food intake in old people of the Korean-Chinese and Han nationality living in Yanji city.METHODS1000 cases of the Korean-Chinese and Han nationality adults aged 60 and older were selected, and the poll survey were made, and 200 cases of the Korean-Chinese and Han nationality adults aged 60 and older were selected to perform with 24 hour dietary recall method.RESULTSThe staple food is rice in Korean-Chinese and Han nationality adults aged 60 and older.The intake of flour in the Korean-Chinese nationality was significantly rower than that in the Han nationality.The intake of soybean oil in the Han nationality is higher than that in the Korean-Chinese nationality.The intake of vegetable oil in the Korean-Chinese nationality is lower than that in Chinese Dietary Guidelines.The intake of vegetable in the Korean-Chinese and Han nationality is lower than Chinese Dietary Guidelines.CONCLUSIONThe old people of the Korean-Chinese and Han nationality in Yanji city should increase the intake of fresh vegetables, and the Korean-Chinese nationality should particularly increase the intake of fat.
