淄博市342份市售生肉中食源性沙门菌的型别特点及耐药性

摘    要:目的 了解市售生肉中食源性沙门菌污染状况、型别特点及耐药性,为食源性沙门菌病的防治提供依据。方法 依据GB 4789.4 《食品安全国家标准 食品微生物学检验 沙门菌检验》及《国家食品微生物风险监测工作手册》进行沙门菌增菌、分离、鉴定、血清分型及药敏试验。结果 淄博市2009 - 2016年342份市售生肉中,生畜肉沙门菌的检出率为22.6%(26/115),生禽肉为36.6%(83/227);109株沙门菌分属28个血清型别;生畜肉中以德尔卑沙门菌为主(11/26),其分离株高耐药抗生素为四环素、奈啶酮酸、氯霉素;耐3类以上抗生素的多重耐药菌株为19.2%;生禽肉中以肠炎沙门菌(33/83)和印第安纳沙门菌(25/83)为主,其分离株高耐药抗生素为奈啶酮酸、氨苄青霉素、磺胺嘧啶;耐3类以上抗生素的多重耐药菌株达到73.5%。结论 生肉中食源性沙门菌的污染率较高,生畜肉与生禽肉中沙门菌的主要血清型别不同,对多种抗生素均表现出高耐药率及多重耐药性。

Abstract:Objective To investigate the type characteristics and drug resistance of food-borne Salmonella in commercial available raw meat, and to provide evidence for the prevention and control of food-borne salmonellosis. Methods Enrichment, isolation, identification, serum typing experiments and drug resistance test about Salmonella were based on GB 4789.4 (National Food Safety Standard Food Microbiological Examination: Salmonella) and Handbook of National Food Microbiological Risk Monitoring. Results Among 342 commercial available raw meat samples from 2009 to 2016 in Zibo, the detection rate of Salmonella in raw meat and poultry meat was 22.6% (26/115) and 36.6% (83/227), respectively. 109 strains of Salmonella were divided into 28 serotypes. Strains in raw meat were dominated by Salmonella Delphi (11/26). Isolated strains were mainly resistant to tetracycline, neramic acid, and chloramphenicol. The rate of strains which were resistant to more than three antibiotics was 19.2%. Meanwhile, main serotypes tested in poultry meat were Salmonella enteritidis (33/83) and indiana Salmonella (25/83). Isolated strains were mainly resistant to neramic acid, ampicillin, and sulfadiazine. The rate of strains which were resistant to more than three antibiotics was 73.5%. Conclusion The contamination level of food-borne Salmonella in raw meat was high. Main serotypes of Salmonella from raw meat and poultry meat were different, but they all showed high resistance and multiple drug resistance.
