2006年宜昌市市售食品中食源性致病菌监测分析

摘    要:目的:了解宜昌市市售食品中食源性致病菌污染状况。方法:对宜昌市几个主要的集贸市场和超市采集7大类10个食品品种进行6类食源性致病菌检测。结果:生禽肉和速冻面米食品(生制食品)中致病菌检出率分别60%和37.5%。6种食源性致病菌中只分离出了沙门菌、弯曲菌、单增李斯特菌和金黄色葡萄球菌。结论:生禽肉和速冻面米食品(生制食品)致病菌检出率较高,沙门菌、弯曲菌、单增李斯特菌和金黄色葡萄球菌仍然是食品中常见的污染菌。

Abstract:Objective:To understand polluting condition of food-borne pathogens in market-sold food in Yichang City.Methods:Collect seven major categories of 10 varieties of foods from several major trading markets and supermarkets of Yichang City,and detect six categories of foodborne pathogen.Results:The detection rate of pathogen was 60% in raw poultry,and 37.5% in quick-frozen pastry(Foods).We separated only Salmonella,Campylobacter,Listeria monocytogenes and Staphylococcus aureus in 6 species of food-borne pathogens.Conclusion:The detection rate of pathogen is high in raw poultry and quick-frozen pastry(Foods).Salmonella,Campylobacter,Listeria monocytogenes and Staphylococcus aureus are still common contaminating bacteria in food.
