摘    要:目的了解某区部队的食品安全现状,针对存在的问题采取相应的对策和措施。方法采用食品安全快速检测系统对某区部队所属食堂和招待所餐厅的8大类食品进行抽样检测,按照国家食品卫生标准进行评价。结果共检测各类食品1147份,其中合格950份,总合格率为82.82%;各类食品中合格率最低的3类食品分别为熟肉制品(63.43%)、蔬菜(66.67%)和凉拌菜(74.29%);各项检测指标中合格率最低的3类食品分别是对硫磷(68.72%)、菌落总数(85.43%)和大肠菌群(90.12%);社会化保障食堂的食品合格率低于部队内部管理食堂。结论某区部队的食品卫生质量总体较好,但需要进一步加强食品卫生知识的宣传教育和岗位培训,加大卫生监督执法的频率和力度,对社会化保障食堂进行重点监管,切实解决蔬菜农药污染、熟肉制品和凉菜微生物污染等常见问题。

Abstract:Objective To investigate the food hygiene quality of the armed force, and take countermeasures re-spectively for existing problems. Methods The 8 kinds of food samples were taken from the canteens and dining halls of the armed force, the samples were detected with the fast food safety detecting system, the de-tected results were judged according to the national food hygienic standard. Results We have detected 1147 portions foods, 950 portions were good, the total qualified rate was 82. 82%. In all kinds of foods, the quality of cooked meat products, vegetables and cool dishes were the worst, the qualified rates were 63.43%, 66.67% and 74.29% repeetively. In all kinds of indexes, the qualified rates of phosphate pesticide, total plate count and coli form bacteria were the lowest, the rates were 68.72% , 85.43% and 90. 12% respective-ly. The qualified rates of foods in socialization canteens were worse than those in interior ones. Conclusions The food hygiene quality of the armed forces was generally good. But need to enhance the education and on - the - job training about the food hygiene, to increase the frequency and dynamism of sanitary control, to custo-dy focal point the socialization canteens, to resolve earnestly the problems about the pesticide pollution of veg-etables and the microbial contamination of cooked meat products and cool dishes.
