摘    要:目的:对美洲大蠊醇提取物中蛋白质稳定性进行研究.方法:通过采用UV法和Folin-酚试剂法,考察了pH、无机盐和有机溶剂等影响因素对蛋白质稳定性的影响.结果:pH、氯化钠、硫酸铵、乙腈和甲醇随着剂量的增加,在不同程度上破坏了蛋白质的结构.结论:不同的影响因素通过改变蛋白质物理化学性质,破坏了蛋白质的稳定性.

Abstract:Objective: Studying the stability of the protein of atitumor activity from Periplaneta americana. Method: The factors of pH, inorganic salt and organic solvent on stability of the protein were studied by the UV and Lowrry method. Result: pH, sodium chloride, ammonium sulfate, acetonitrile and methanol are added and the structure of protein is changed. Conclusion: The physical and chemical properties are changed by different kinds of factors, and finally the stability of the protein is damaged.
