摘    要:目的:了解厦门市售食品化学污染状况。方法:2009年-2010年按照福建省化学污染物监测计划要求采集各类食品进行重金属、农药残留、食品添加剂等化学污染物监测分析。结果:依据相关标准,厦门市主要食品中铅、镉、汞含量合格率分别为96.8%、98.9%、96.3%,农药残留总体检出率为11.7%,检出农药主要为拟除虫菊酯类。监测食品添加剂中合成色素和二氧化硫未检出超标样品,其余四种合格率从高到低依次为亚硝酸盐、糖精钠、环己基氨基磺酸钠(甜蜜素)铝合格率最低仅为55.3%。结论:厦门市售食品化学污染总体水平较低,但部分食品仍存在污染,应采取针对性措施,加强监督监测力度,保证消费者的身体健康。

Abstract:Objective:To understand the situation of chemical contamination of food in Xiamen.Methods:According to chemical contaminant monitoring plan of Fujian,different kinds of food were collected from 2009 to 2010 to determine pesticide residues,metal contaminants,food additives.Results:In accordance with the relevant standards,qualified rates of lead,cadimium and mercury in food were 96.8%,98.9% and 96.3% respectively.The total detection rate of pesticide residues was 11.7%,and the main detected pesticide was pyrethroid residues.No samples were determined out of limits on synthetic pigments and sulphur dioxide residues,and the rate of qualified samples from high to low in turn on the other four kinds of food additives were nitrite,sodium saccharin,sodium cyclamate and aluminum,and the lowest qualified rate was found in aluminum(55.3%).Conclusion:The overall level of chemical contaminations in market food was low,but some food were still contaminated.Countermeasures should be taken to strengthen the monitoring and supervision to guarantee the consumers’ health.
