摘    要:目的分析亚硝酸盐食物中毒的流行病学和卫生学特征,为预防和控制亚硝酸盐食物中毒的发生提供科学依据。方法根据南通市2005—2009年亚硝酸盐导致食物中毒事故登记表、食物中毒事故调查表与调查总结等相关资料进行归类分析。结果全市报告亚硝酸盐引起的食物中毒共计12起,发病129人,死亡1人;占同期总食物中毒次数、发病人数、死亡人数的31.58%、9.95%、33.33%。结论亚硝酸盐食物中毒控制重点是卫生监督部门要加强对熟卤制品加工、餐饮业和集体食堂的卫生监督管理,教育管理相对人牢固树立食品安全第一的观念,按规范正确使用食品添加剂。

Abstract:Objective]To analyze the epidemiological and hygienic features of food poisoning induced by nitrite,and provide scientific evidence for prevention and control of it.Methods]The classification analysis was based on registration forms of food poisoning induced by nitrite,food poisoning accident investigation forms and survey summary in Nantong City from 2005 to 2009.Results]Food poisoning induced by nitrite were reported in a total of 12 incidents with 129 cases and 1 death case,which occupied 31.58%,9.95%,33.33% of total food poisoning incidents,total cases,and total death cases respectively during the corresponding time period.Conclusion]The control point of food poisoning induced by nitrite is that the health inspection department should strengthen the health inspection and management on sauced and cooked meat processing,catering industry and collective eateries,educate and management the relatives to firmly establish the concept of food security first,and correctly use food additive based on specification
