目的 了解酒泉市戈壁设施种植的番茄、葫芦、黄瓜、辣椒、豆角中铅、砷、汞、镉的污染状况,评估人体摄入后的健康风险。方法 利用国家标准检验方法,在酒泉市总寨和东洞戈壁农业产业园区采集检测274份主栽蔬菜中铅、砷、汞、镉含量,结合单因子污染指数和内梅罗污染指数法对蔬菜受重金属污染的程度进行评价,利用靶标污染系数法对蔬菜中重金属对人体的健康风险进行评估。结果 274份蔬菜中铅、砷、汞和镉的含量范围分别为0~0.050 1 mg/kg、0~0.053 8 mg/kg、0~0.001 0 mg/kg和0~0.048 8 mg/kg,平均含量分别为0.010 3、0.010 3、0.000 2和0.008 7 mg/kg,均未超出国家标准规定的食品中污染物限量。5种蔬菜中4种重金属的污染指数均低于0.7,靶标危害系数均小于1。结论 酒泉市总寨和东洞戈壁农业产业园区主栽的5种蔬菜受铅、砷、汞、镉污染程度较轻,属于清洁水平,处于安全级别,膳食摄入风险较低。对比其它地区蔬菜,酒泉戈壁设施蔬菜中重金属含量总体不高,与有机设施蔬菜基地结果接近。  相似文献

BACKGROUND/OBJECTIVESIncreasing the consumption of vegetables and fruits in Mexico remains a challenge. Promoting sustainable food production systems through schools may be an effective way to educate young people about food and nutrition issues. A study of nutritional education in adolescents, based on the school garden, is necessary in order to evaluate its effects on the consumption of fruits and vegetables among middle- and upper-income segments of the population. The objective of this study was to evaluate the effect of an educational intervention, accompanied by a school garden as an educational teaching tool, to improve vegetable and fruit consumption by Mexican teenagers attending a private middle/high school.SUBJECTS/METHODSTeenagers between 12 and 18 years of age (n = 126) attending a private middle/high school in Queretaro, Mexico participated in a 3-arm, controlled, comparative impact study using a vegetable and fruit consumption frequency questionnaire, food consumption diaries, a psychosocial factor assessment questionnaire of vegetable and fruit consumption, and structured interviews. The participants were randomized into 3 experimental groups: 1) food education + school garden (FE + SG), 2) FE only, and 3) control group (CG).RESULTSThe FE + SG and FE groups significantly increased the frequency and daily intake of vegetables and fruits compared to the CG. The FE + SG group showed greater understanding of, reflection upon, and analysis of the information they received about vegetable and fruit consumption, as well as a greater willingness to include these in their daily diet.CONCLUSIONSFE accompanied by a SG as a teaching tool is more effective at promoting vegetable and fruit consumption than either education alone or control in teenagers in middle-upper income segments of the population.  相似文献

BackgroundUnderstanding how vegetables are incorporated into the diet, especially in the types and amounts recommended by the Dietary Guidelines for Americans, and how this alters dietary intake patterns is vital for developing targeted behavior change interventions.ObjectiveTo determine how a provision of vegetables was incorporated into the diet of adults with overweight and obesity; whether or not the provided vegetables displaced other foods; and what, if any, effect this had on diet quality and body weight and composition.DesignThis study investigated secondary outcomes from the Motivating Value of Vegetables Study, a community-based, randomized, parallel, nonblinded controlled trial. Participants were randomly assigned to a provided vegetable intervention or attention control group using a one to one allocation ratio.Participants/settingMen and women with self-reported low vegetable consumption, aged 18 to 65 years, with a body mass index ≥25 were recruited from Grand Forks, ND, between October 2015 and September 2017. Only participants randomized to the provided vegetable intervention group (n = 51; attrition = 8%) were included in this secondary analysis.InterventionDietary Guidelines for Americans recommended types and amounts of vegetables were provided weekly for 8 weeks.Main outcome measuresHow the provided vegetables were incorporated into the diet was measured using daily self-report and 24-hour dietary recalls. Diet quality was assessed via the Healthy Eating Index 2015. Body weight and composition were measured before and after the intervention.Statistical analyses performedData were assessed using generalized linear mixed models where phase (pre, post) was the within-subject factor and subject was the random effect.ResultsParticipants self-reported using 29% of the provided vegetables as substitutes for other foods. With the increase in vegetable consumption, there were decreases in total grains (mean difference ± standard deviation; –0.97 ± 3.23 oz-equivalents; P = 0.02), protein foods (–1.24 ± 3.86 oz-equivalents; P = 0.01), saturated fats (–6.44 ± 19.63 g; P = 0.02), and added sugars (–2.44 ± 6.78 tsp-equivalents; P = 0.02) consumed. Total Healthy Eating Index 2015 scores increased (+4.48 ± 9.63; P = 0.001) and dietary energy density decreased (–0.44 ± 0.52 kcal/g; P < 0.0001). There was no change in total energy intake or body weight and composition.ConclusionsIncreasing vegetable consumption to meet Dietary Guidelines for Americans recommendations alters dietary intake patterns, improving diet quality and energy density. These findings highlight the importance of characterizing how individuals incorporate Dietary Guidelines for Americans recommendations into their diet.  相似文献

Grains, fruits, and vegetables are the primary sources of dietary fiber (DF), with the white potato contributing nearly 7% of the DF to the US food supply. The DF composition of the white potato—with or without the skin and regardless of cooking method—compares well with the DF content of other vegetables. Many health benefits, including improved gastrointestinal health, are attributed to greater DF consumption; however, less than 3% of males and females have an adequate intake of DF. Because of this population-wide shortfall, DF is considered to be a nutrient of concern. In this study, using data from the National Health and Nutrition Examination Survey 2009 to 2010, we examined the mean intake of DF across sex, age, race/ethnicity, family income, and poverty threshold. This study shows that mean intake of DF is far below recommendations, with children and adolescents aged 2 to 19 years consuming an average of less than 14 g of DF per day. Adults 20+ years old consume, on average, about 17 g of DF per day, and men consume significantly more DF than women. Non-Hispanic black adults consume significantly less DF compared with other race/ethnic groups. Lower family income and living at less than 131% of poverty were associated with lower DF intakes among adults. Federal and local government policies should encourage consumption of all vegetables, including the white potato, as an important source of DF.  相似文献

ObjectivesFamily history is considered as an important predictor of cardiovascular diseases (CVDs) and diabetes. Available research findings suggest that family history of chronic diseases is associated with perceived risk of disease and adoption of healthy behaviours. We examined the association between family history of cardio-metabolic diseases (CMDs) and healthy behaviours among adults without self-reported CMDs.MethodsCross-sectional data of 12,484 adults, without self-reported CMDs, from the baseline survey of Centre for cArdiometabolic Risk Reduction in South-Asia (CARRS) cohort study were analysed.ResultsFamily history was positively associated with non-smoking and high fruits & vegetables consumption in the age group of 45–64 years and moderate to high physical activity in the age group ≥65 years after adjusting for sex, education, wealth index, city and body mass index.ConclusionsUnderstanding perceived risks and cultural or psychological factors related to family history through ethnographic studies may deepen understanding of these associations.  相似文献

山西省饮水型慢性砷中毒病区环境介质中砷暴露水平调查   总被引:2,自引:0,他引:2  
目的 调查山西省饮水型慢性砷中毒病区环境介质水、土壤以及自产粮食、蔬菜中的砷含量,了解该病区外环境中砷暴露水平,为病区地方性砷中毒的防治提供科学依据.方法 在山西省山阴县饮水型慢性砷中毒病区,按照《地方性砷中毒诊断标准》(WS/T 211-2001)选择126个家庭共309人作为调查对象,入户采集饮用水、土壤、当地自产粮食(小米、黍子)和蔬菜(马铃薯).水砷和粮食砷采用电感耦合等离子体质谱联用仪(ICP-MS)检测,土壤和蔬菜通过原子荧光分光光度计(AFS)定量检测砷含量.按饮水含砷量分为5组(≤10,> 10~50,>50 ~ 100,>100~200,>200 μg/L),以≤10 μg/L组作为参考值,分析水砷暴露与皮肤病变的关系.结果 在抽取的126份饮用水样品中,水砷范围为4.04~720.00 μg/L,中位数为87.75 μg/L,超标率为63.49%(80/126);粮食砷浓度范围为0.16~4.58 mg/kg,中位数为0.66 mg/kg,超标率为98.73%(78/79);土壤和蔬菜中砷含量范围分别为5.34~13.74 mg/kg和0~ 0.30 mg/kg.用标准参考人估算通过饮水、粮食、蔬菜每天摄入的无机砷量,并与世界卫生组织(WHO)规定无机砷最大日允许摄入量(MTDI)比较,粮食中总砷含量为0.17 mg/kg时无机砷的摄入量相当于水砷浓度为10μg/L时无机砷的摄入量.同时,分析水砷暴露与皮肤病变关联强度,组间比值比(OR)分别为3.219、9.001、56.127、97.734,呈递增趋势,地方性砷中毒皮肤病变发病危险性逐渐增加,进一步对水砷暴露水平与皮肤病变严重程度进行Spearman等级相关检验,r=0.501 (P<0.05),水砷暴露与砷中毒的皮肤病变存在关联性且水砷暴露水平越高,皮肤病变程度越严重.结论 山西省山阴县饮水型慢性砷中毒病区饮用水、自产粮食砷含量偏高,而土壤和蔬菜砷含量不高.饮用高砷井水是导致慢性砷中毒的主要危险因素,通过饮食摄入的砷也不容忽视.  相似文献

Background and aimsThe aim of this study is to investigate the association between the identified patterns of fruits and vegetables and metabolic syndrome (MetS) incidence, and to investigate whether lifestyle factors and socioeconomic status modify the effect of the patterns on MetS risk.Methods and resultsWe prospectively studied 1915 participants of the Tehran Lipid and Glucose Study, who were aged 19–74 years and followed up for dietary assessment using a validated, semi-quantitative food frequency questionnaire. After adjustment for confounding factors, total vegetable intake was inversely related to the risk of MetS. Total fruit and total fruit and vegetable were not associated with MetS risk. We identified four major patterns of fruits and vegetables by factor analysis: “fresh fruit pattern”, “vegetable pattern”, “dried fruit and cruciferous vegetable pattern”, and “potatoes and fruit juice pattern”. “Vegetable pattern” was negatively associated with MetS risk, and “potatoes and fruit juice pattern” increased the risk of MetS. Among participants with weight gain <7% during follow-up, all four identified patterns reduced MetS risk. When stratified by smoking, “vegetable pattern” and “dried Fruit and cruciferous vegetable pattern” lowered MetS risk among non-smokers. Stratification based on education resulted in MetS risk reduction across tertiles of “fresh fruit pattern” and “vegetable pattern”. First and second tertiles of “dried fruit and cruciferous vegetable pattern” lowered MetS risk among educated participants, compared to the reference.ConclusionsThe reduction in MetS risk caused by fruits and vegetables intake depends on the modifying effect of lifestyle and socioeconomic factors.  相似文献
