We examined the relation of fruit and vegetable intake with dietary fat intake under conditions in which individuals consume recommended number of portions of dairy, meat and grain foods, using 24-hour dietary recall data from the NHANES II of 1976–80. Only recalls that included at least 2 servings each of dairy foods and meat and 4 servings of grains, but variable servings of fruits and vegetables (ranging from 0 to 2 or more) were examined, yielding a total of 9 food group patterns (possible combinations of food group servings) as reported by 1,490 respondents. In patterns ranging from 0 to 2 servings each of fruits and vegetables, the mean percent of energy as fat varied from 39% to 36%. We observed a slight trend for decreasing energy from fat with increasing number of fruit-but not vegetable-servings. Consumption of fruits and vegetables was not associated with selection of lower-fat foods in the meat, dairy or grain groups. The percent of daily fat contributed by the miscellaneous food group (containing visible fats, sweeteners, and baked products with a high fat or sugar content) increased with increasing vegetable-but not fruit-servings. These results suggest that without conscious effort to reduce fat intake, an increase in fruit and vegetable intake may have a relatively minor impact on reduction of dietary fat.  相似文献

Elderly persons are reported to have low dietary intakes of vitamin B-6. Knowing which foods are the primary contributors of dietary vitamin B-6 may be useful to health professionals working to improve the nutritional status of the elderly. Therefore, we examined the contribution of five food groups--flesh foods (including all meat/fish/poultry), grains/cereals, legumes/nuts, fruits/vegetables, and dairy products/eggs--to dietary vitamin B-6 intake in 198 free-living elderly persons aged 60 years or older. Subjects were primarily Caucasian, low-income non-smokers; their mean age was 72 years. Mean dietary vitamin B-6 intake, determined from 3-day diet records, was 1.6 +/- 0.6 mg/day. The fruit/vegetable group was the largest dietary contributor of vitamin B-6 (0.69 mg/day). Flesh foods and cereals/grains contributed equally to the vitamin B-6 intake (0.35 and 0.34 mg/day, respectively). The lowest contributors were dairy products/eggs and legumes/nuts. Approximately 96% of the vitamin B-6 intake could be accounted for by the five food groups. Twenty percent of the population (no. = 39) consumed less than 66% of the Recommended Dietary Allowance (RDA) for vitamin B-6; their vitamin B-6 intake from fruits/vegetables and grains/cereals was 0.36 and 0.10 mg/day, respectively. Individuals with vitamin B-6 intakes greater than or equal to 100% of the RDA (no. = 69) consumed greater amounts of fruits/vegetables (primarily bananas) and grains/cereals (primarily breakfast cereal) than did persons who consumed less than 66% of the RDA for vitamin B-6; their vitamin B-6 intake from fruits/vegetables and grains/cereals was 0.98 and 0.55 mg/day, respectively. OBJECTIVE: We assessed fiber intakes and determined the major food categories that contribute to dietary fiber intakes in the Taiwanese elderly. We also examined the association between fiber intake and health status. METHODS: Macronutrients, dietary, and crude fiber intakes of 173 elderly men (76.4 +/- 0.4 y) and 140 women (76.6 +/- 0.4 y) were assessed with 24-h recall. Health status was assessed by the checklist questionnaire. Food was categorized as grain, vegetable, fruit, soy, other legumes, snack, seaweed, nuts, and mushroom groups. RESULTS: The mean dietary and crude fiber intakes by our older population were 8.79 +/- 0.24 g/d and 3.30 +/- 0.08 g/d, respectively. Significant associations were found between low fiber intakes and swallowing ability in the elderly population. Vegetables, fruits, and grains contributed most (>85%) to dietary fiber intakes for men and women. However, women consumed a greater proportion of fiber from vegetables and a lesser proportion from grain and snacks than did men. CONCLUSIONS: Elderly subjects had remarkably low dietary fiber intakes (g and g/Mcal). Swallowing and chewing ability determined the amount of fiber consumed. Vegetable contributed more than half of dietary fiber intake. The selection of food groups exerted sex-dependent pattern in grains, vegetables, and snacks.  相似文献

BACKGROUND: The balance between the intake of animal and the intake of plant foods may influence renal vascular integrity as reflected by urinary albumin excretion. OBJECTIVE: We assessed cross-sectional associations between urinary albumin excretion and dietary patterns and intake of plant and animal foods. DESIGN: At baseline, diet (food-frequency questionnaire) and the urinary albumin-to-creatinine ratio (ACR; spot urine collection) were measured in 5042 participants in the Multi-Ethnic Study of Atherosclerosis who were aged 45-84 y and were without clinical cardiovascular disease, diabetes, or macroalbuminuria (sex-adjusted ACR >or= 250). We derived dietary patterns by principal components analysis. We also summed food groups to characterize plant food intake (fruit, fruit juice, vegetables, nuts, legumes, whole grains, and refined grains), animal food intake (red meat, processed meat, poultry, fish, high-fat dairy, and low-fat dairy), and nondairy animal food intake. RESULTS: After adjustment for multiple demographic and lifestyle confounders, a dietary pattern characterized by high consumption of whole grains, fruit, vegetables, and low-fat dairy foods was associated with 20% lower ACR across quintiles (P for trend = 0.004). Neither total animal nor total plant food intake was associated with ACR. However, greater low-fat dairy consumption was associated with 13% lower ACR across quartiles (P for trend = 0.03). Total nondairy animal food consumption was associated with 11% higher ACR across quintiles (P for trend = 0.03). CONCLUSIONS: A high intake of low-fat dairy foods and a dietary pattern rich in whole grains, fruit, and low-fat dairy foods were both associated with lower ACR. In contrast, collectively, nondairy animal food intake was positively associated with ACR.  相似文献

While there are several factors that contribute to the diet quality of children in childcare, one contributing factor in Family Childcare Homes (FCCHs) is the provider’s ethnicity. However, research examining the food items provided in this setting is limited; in particular, with regards to differences between FCCHs of Latino and non-Latino providers. The aim of this study was to identify and describe the food items that contribute to food group intake in preschool-aged children attending FCCHs, and to examine differences by provider ethnicity. This secondary data analysis used baseline data from Healthy Start/Comienzos Sanos: a cluster-randomized trial. Children’s dietary intake was collected using the Dietary Observation in Child Care method and entered into Nutrition Data System for Research software. Food groups were based on the Nutrition Coordinating Center classification. Contribution of food items to their respective food group was calculated as a proportion, using ratio of means and presented as a percentage. Ethnic differences were tested with ANCOVA (p < 0.05) with Bonferroni adjustments for multiple comparisons. All providers (n = 120) were female and 67.5% were Latino. Most fruit consumed by children was in the form of juice (85%), three-fourths of the grains consumed were refined (75%), and half of the sweets consumed were syrup/honey/jelly (50%). Most of the vegetables consumed were non-starchy (61%), nearly three-fourths of dairy consumed was low-fat (71%), and vegetable oils contributed the most to the fats group (89%). Food items differed by provider’s ethnicity, with children cared for by non-Latino providers consuming a higher proportion of fruit juice, animal fats and a lower proportion of legumes (p < 0.001 for all). Children with Latino providers consumed a lower proportion of non-starchy vegetables, low-fat dairy, and nuts/seeds (p < 0.001 for all). FCCH providers could offer more whole fruits and grains and a greater variety of vegetables. Differences by ethnicity suggest providers could benefit from culturally tailored recommendations.  相似文献

目的 了解上海市居民膳食营养状况及季节特征。方法 分别在2012-2014年间4个不同季节对上海市代表性样本人群进行追踪调查,采用连续3 d 24 h膳食回顾询问法辅以家庭调味品称重法收集食物摄入信息。依据中国食物成分表计算能量及产能营养素摄入。结果 2012-2014年上海市居民全年平均每标准人日粮谷类摄入量191.09 g、蔬菜250.69 g、水果107.23 g、动物性食物223.53 g、乳及乳制品96.39 g、大豆及其制品11.19 g、烹调油36.54 g、烹调盐7.57 g,不同季节食物消费差异有统计学意义(P<0.05)。平均每标准人日能量摄入量2 048.70 kcal、碳水化合物241.04 g、蛋白质82.35 g、脂肪85.99 g,脂肪提供能量百分比37.99%。季节、年龄、地区和收入是膳食结构的影响因素(P<0.05)。结论 上海市居民能量摄入满足需求,脂肪能量摄入比例较高,膳食结构欠合理。烹调油、盐摄入量低于国家大城市平均水平但仍高于推荐量,应继续开展针对性营养干预。膳食摄入存在季节特征,夏季膳食摄入更合理,相关研究需考虑季节因素影响。  相似文献

目的:通过对幼儿园儿童进行膳食调查和体格检查,了解幼儿园儿童膳食营养状况,初步探讨儿童生长发育指标Z评分的膳食影响因素,为合理的膳食营养指导提供科学依据。方法:采用双份饭菜法收集儿童24h内膳食情况,根据食物成分表计算儿童24h内各种类别膳食的摄入量水平,采用Z评分法对其营养状况进行评价。结果:除奶类和食用油外,北京和西安幼儿园儿童在摄入粮谷类、鱼肉禽、蛋类、豆制品、蔬菜、水果、饮料、食盐等方面差异有统计学意义(P0.05),北京幼儿园儿童膳食中摄入了较多的鱼肉禽、蛋类、蔬菜、水果和饮料,西安幼儿园儿童摄入了较多的粮谷类食品、豆制品和食盐。多因素分析显示,儿童生长发育Z评分的膳食影响因素主要有豆制品、奶类和蔬菜类食物,超重儿童膳食中豆制品摄入水平较低,生长迟缓儿童膳食中奶类摄入水平较低,肥胖儿童膳食中蔬菜摄入水平较低。结论:所调查的北京和西安幼儿园儿童的膳食结构存在较大差异,豆制品、奶类和蔬菜食品的摄入量水平可能是幼儿园儿童生长发育的保护因素。  相似文献

The extent of diversity in the diets of black and white adults (n = 11,658) aged 19 to 74 years was evaluated from 24-hour dietary recalls obtained in the second National Health and Nutrition Examination Survey. Each 24-hour recall was evaluated for the consumption of items from the dairy, meat, grain, fruit, and vegetable groups (Food Group Score). A second scoring method (Serving Score) evaluated every recall for consumption of at least two servings each from dairy, meat, fruit, and vegetable groups and four servings from the grain group. Only a third of the population surveyed reported consuming foods from all the food groups on the survey day; less than 3% reported consuming foods from all food groups in at least the recommended amount. Blacks scored lower on both types of diet diversity scores than whites. Both types of diversity scores showed a significant trend to increase with increasing income and level of education. Failure to consume any foods from the dairy, meat, grain, fruit, and vegetable groups was reported by 24%, 6%, 5%, 46%, and 18%, respectively, of the population on the survey day. The proportion of the population consuming at least the desired number of servings from each of these food groups was 51%, 71%, 29%, 29%, 61%, respectively. The results emphasize the need for major public campaigns directed at increasing the diversity of US diets. Special target groups include minorities and those with limited income and formal education.  相似文献

Identifying dietary sources of nutrients by assigning survey foods to food groups can under- or overestimate the contribution a group makes to the intake of specific nutrients. Using calcium and food intakes from USDA's 1994-1996, 1998 Continuing Survey of Food Intakes by Individuals, the authors determined the proportion of dietary calcium from the dairy, grains, meats, fruits, and vegetables groups using four grouping protocols. Calcium contributions from milk and cheese were higher as more ingredient sources and fewer survey food items were represented in the dairy group. Milk, cheese, and yogurt reported as separate survey food items contributed 42% of total calcium intake. An additional 21% of dietary calcium came from dairy ingredients in mixed foods such as macaroni and cheese, pizza, sandwiches, and desserts. The remaining dietary calcium sources were single grains (16%); vegetable (7%); meat, poultry, and fish (5%); fruit (3%); and miscellaneous foods (7%). Data quantifying the nutrient contributions from dairy ingredients could affect dietary guidance messages or research using dairy foods as variables.  相似文献

BackgroundEvening eating has been associated with higher energy intake and lower nutrient density. However, these qualities may not characterize all late evening (LE) eating patterns.ObjectiveWe sought to characterize US adults’ LE eating patterns on a given day and identify differences, if any, in pattern-specific associations with, and impact on, daily energy intake and total diet quality.DesignLE eating patterns, energy intakes, and Healthy Eating Index (HEI) scores were identified using Day-1 dietary recall data from the cross-sectional National Health and Nutrition Examination Survey 2013-2016.Participants/settingThe sample included adults aged ≥ 20 years (n = 9,861). LE reporters were respondents who consumed foods/beverages between 20:00 and 23:59 on the intake day.Main outcome measuresEnergy intake and HEI-2015 scores by LE status/pattern and the impact of LE consumption on these measures.Statistical analysesCluster analysis assigned individuals to LE eating patterns based on the LE energy contribution of food/beverage groups. Regression models estimated energy intake and HEI-2015 scores; estimates were compared between LE reporters and nonreporters. Similarly, LE’s contribution to total energy and the difference in total HEI inclusive vs exclusive of LE consumption were estimated and compared among patterns.ResultsAmong US adults, 64.4% were LE reporters. Eleven LE patterns were identified; the six most prevalent patterns (representing 89% of LE reporters) were further analyzed. Daily energy intake in all prevalent patterns except the fruit pattern exceeded that of nonreporters by ≥ 268 kcal (unadjusted; P < 0.001), varying by pattern. Conversely, total HEI score did not differ from that of nonreporters (51.0) in any pattern except the fruit pattern, where it was higher (57.4, unadjusted; P < 0.001). Generally, LE consumption’s impact on energy was high and its impact on HEI scores was low.ConclusionsLate evening food/beverage consumption is common among US adults, and LE patterns are not monolithic in their associations with, and impact on, total energy intake and dietary quality.  相似文献

Food security in Bangladesh has improved in recent years, but the country is now facing a double burden of malnutrition while also being highly vulnerable to climate change. Little is known about how this may affect food supply to different sectors of the population. To inform this, we used a national dietary survey of 800 rural households to define dietary patterns using latent class analysis. Nutrient adequacy of dietary patterns and their potential vulnerability to climate shocks (based on diversity of calorie sources) were assessed. We fitted mixed effects logistic regression models to identify factors associated with dietary patterns. Four dietary patterns were identified: rice and low diversity; wheat and high diversity; pulses and vegetables; meat and fish. The wheat and high diversity and meat and fish patterns tended to be consumed by households with higher levels of wealth and education, while the rice and low diversity pattern was consumed by households with lower levels of wealth and education. The pulses and vegetables pattern was consumed by households of intermediate socio-economic status. While energy intake was high, fat and protein intake were suboptimal for all patterns except for the wheat and high diversity pattern. All patterns had fruit and vegetable intake below the WHO recommendation. The wheat and high diversity pattern was least vulnerable to shocks, while the rice and low diversity pattern was the most vulnerable, relying mainly on single cereal staples. The diets showed “double vulnerability” where the nutrient inadequate patterns were also those most vulnerable to shocks.  相似文献

BACKGROUND: Public health practitioners need valid tools to survey trends in dietary intake. The Rapid Risk Factor Surveillance System (RRFSS) includes an optional six-item vegetable and fruit intake food frequency questionnaire (FFQ) module. Our objectives were 1) to compare reported vegetable and fruit consumption from the FFQ to quantified servings (portions) defined by Canada's Food Guide to Healthy Eating and ascertained by a reference method, and 2) to compare the FFQ with the reference method for their classification of the proportion of respondents consuming five or more servings of vegetables and fruit per day. METHODS: Dietitians administered 24-hour recalls to each of 174 adult respondents who had completed the FFQ as part of the RRFSS. Recalls were conducted over the telephone on three separate occasions using an adaptation of the multiple pass method. RESULTS: The mean total intake of vegetables and fruit for the group was 4.6 times/day from the FFQ versus 4.8 servings/day from the recalls (paired t-test; p = 0.92). Thirty-seven percent of respondents were classified as consuming five or more times/day by the FFQ versus 35% by the 24-hour recall servings. CONCLUSION: The FFQ tool can be used as a proxy for quantified intake of vegetable and fruit consumption.  相似文献

Aim:  To assess the effectiveness of specific advice for increasing fruit, vegetable and dairy intake in free-living men participating in a weight loss study.
Methods:  Subjects were randomised to one of two 12-week weight loss diets, either the WELL with daily targets of four serves of fruit, four serves of vegetables and three serves of dairy or a low fat diet (LF) with general advice to increase fruit and vegetable intake. Three-day food group diaries and a food frequency questionnaire assessed intake.
Results:  Fifty-four overweight/obese male adults completed the study (WELL, n = 27; LF, n = 27; body mass index (mean ± standard deviation), 30.4 ± 2.5 kg/m2; age, 47.7 ± 9.5 years). There was no difference in mean weight change between groups (WELL, −4.8 ± 3.3 kg; LF, −4.6 ± 3.1 kg). Subjects on the WELL diet had greater (mean difference ± standard error) fruit (0.7 ± 0.2 serves/day), vegetable (1.2 ± 0.2 serves/day) and dairy (1.1 ± 0.1 serves/day) intakes than the LF group (measured by the food group diaries) (all P  < 0.01). The WELL group reached the daily target for fruit from week 1 (4.7 ± 1.4 serves/day), vegetables by week 6 (4.1 ± 1.5 serves/day) and for dairy by week 8 (3.0 ± 0.8 serves/day).
Conclusions:  Providing specific dietary targets to men for weight loss appears to promote greater consumption of fruit, vegetable and dairy foods than providing general dietary advice. Meeting dietary targets appears to require different adjustment periods depending on the food type.  相似文献

As the population of the United States continues to age, it has become increasingly more important to recognize the food intake and eating habits of older adults. The objective of this study was to describe the food group intake, factors predicting food group intake, and the food choices of community-dwelling Kansans, 80 years of age and older who participate in congregate meal programs. Participants completed a short questionnaire querying demographic information, current health status, and dietary supplement use. Participants (n = 113) were then followed up via telephone to complete two 24-hour diet recalls. Data were analyzed to determine adequacy of food group intake and mean intake. Regression analyses were used to determine factors predicting intake and frequency analysis established food typically consumed. Female participants were significantly more likely to consume more fruit servings than males. Intake was low for all five of the food groups, especially dairy. Chronic health conditions and dietary supplement use were consistently predictive factors of the amount of each food group consumed.  相似文献

The main objective of this study was to determine the association between cognitive restraint, nutritional intake and eating patterns in free-leaving subjects. We administered a questionnaire that included information about eating behaviour (restraint, disinhibition, and hunger), dietary intake, and physical activity; 380 students (60% female) completed the study. The association of restraint (low/high) and disinhibition (low/high) with dietary intake was tested using MANOVA in a 2x2 factorial design. Statistically significant main effects were further analyzed using ANOVAs. To identify eating patterns, factorial analysis was employed. Among women, high restrainers reported lower consumption of energy, pastry, and starchy foods, and higher consumption of vegetables, and fish, than low restrainers. In male subjects, high restrainers consumed significantly more vegetables than low restrainers. The major food pattern in female restrainers aggregate: higher consumption of legumes and fruit intake; and lower consumption of pastry, sugar, and starchy foods. In restrained men, the more important food pattern consists of vegetable soup, fruit, milk, and eggs. These differences should be considered in clinical interventions for individuals seeking a better body weight control.  相似文献

The cross-sectional 2007 Australian National Children’s Nutrition and Physical Activity Survey collected detailed dietary information from a representative sample of more than 4400 children by 24-h dietary recall. Dairy food intake by Australian children is substantially lower than recommendations, and decreases as a percentage of energy intake as children grow older. Children aged 2 to 16 years are, on average, 2.3 times more likely to have a dairy food at the first daily occasion of eating, than at the second occasion. For children who consumed any dairy food at the first occasion of eating, the total daily intake of dairy foods was 129% (95% CI 120%–138%) greater than for children who did not consume a dairy food at the first occasion of eating. Their dairy food intake for the rest of the day following the first occasion of eating was also greater by 29% (95% CI 21%–37%). Younger age group, male sex, location of eating being at home or in a residence and starting the first occasion of eating from 6 a.m. to 9 a.m. are all jointly associated with having a dairy food at the first occasion of eating. A simple strategy to increase Australian children’s intake from the dairy and alternatives food group may be to make sure that the first occasion of eating each day includes a dairy food or a nutritional equivalent.  相似文献

To investigate whether aquatic athletes follow optimal dietary intake, 58 athletes, all members of the Greek national swimming and water polo teams, were tested. Dietary intake was assessed at the nutrient, food, and food group level using the 24-h recall method and a food frequency questionnaire. Mean energy intake for males and females was 14.3 and 8.5 MJ, respectively. Mean carbohydrate consumption for male and female athletes was 4.5 g/kg and 3.8 g/kg of body weight, respectively. Fat intake was 153 g for males and 79 g for females. A significant number of the athletes (71% of the males, 93% of the females) did not meet the Dietary Reference Intakes for at least one of the antioxidant vitamins. The data suggest that athletes of both genders consumed too much fat and too little carbohydrate. Insufficient fruit and vegetable intake was related to low intake of antioxidants.  相似文献

Abstract: The association between greater fruit and vegetable intake and better health outcomes is now well established, and dietary guidelines and recommendations promote increased intake of fruit and vegetables. The correspondence of self–assessed change in, and adequacy of, fruit and vegetable intake with dietary intake data was investigated using data from a food frequency questionnaire administered in 1989 and again in 1992 to 453 randomly selected adults from Dalby, Queensland. There was some accuracy in self–reported increased intake of fruit for women, although the dietary data for 44 per cent of women who reported an increase in intake did not show such an increase. Self–reported increased intake did not correspond with dietary data for men or for vegetable intake for women. Self–assessed adequacy of fruit and vegetable intake was associated significantly with mean intake and intake frequency data. The association was stronger for men for fruit and for women for vegetables. Nonetheless, high percentages of people who consumed less than two servings of fruit or three servings of vegetables daily assessed their intake as 'about right'. There is a need for clear, consistent and widely promoted messages recommending intake of two fruit and five vegetable servings daily to increase awareness of the amounts of fruit and vegetables Australians should consume.  相似文献

目的为了解北京市50岁及以上中老年人的膳食营养状况,对2002年“中国居民营养与健康状况调查”北京地区的结果进行分析。方法采用连续3d的称重法和24h回顾法,收集样本人群的食物消费种类及数量,获得个体每日食物和营养素的摄入量。结果北京市中老年人群的膳食以谷类为主,城郊区在膳食比例上存在差异。虽然人群的营养素平均摄入水平已接近或超过每日营养素供给量(RNI),但个体之间存在较大差异。人群中仍有相当比例的个体能量、蛋白质、脂溶性维生素和B组维生素以及锌、钾等营养素的摄入达不到RNI。结论北京市中老年人群膳食结构仍欠合理;应增加维生索和矿物质丰富的蔬菜、水果和豆类制品的摄入;控制脂肪和钠的摄取;并需努力减少个体之间的差异。  相似文献
