The studies on nitrates and nitrites food intake in years 1996-2005 were curried out in six types of households. Using household budget data and literature mean values of nitrates and nitrites contents in food products food intakes of these compounds were calculated and compared to acceptable daily intake (ADI) taking into consideration main sources of them. The obtained results indicated that the mean nitrate and nitrite food intakes did not exceed ADI and were relatively low 132-190 mg NaNO3/per person/day (56.8% ADI), and 3.0 to 3.5 mg NaNO2/per person/day (58% ADI). Nitrate and nitrite food intakes depended on type of household being highest at pensioners and retired persons and farmers. The main sources of nitrates were vegetables and their products supplied 89% of nitrates whereas meat and meat products supplied 69% of nitrites.  相似文献

The studies on cadmium food intake in years 1993-1997 were carried out in six types of households i.e. workers, worker-farmers, farmers, pensioners and retired, self-employed households and families maintaining themselves on non-income sources. Using household budget data and "Tables of trace elements in food products" mean and maximum food intake of cadmium was calculated and compared to provisional tolerable weekly intake (PTWI) taking into consideration main sources of them. The obtained results indicated that the mean cadmium food intake did not exceed PTWI value but maximum intake of one was 38% higher than PTWI. Cadmium intake depended on type of household being highest at farmers, pensioners and retired persons. The main food sources of cadmium were: cereals supplied 43% of one, vegetables and their products supplied 30% cadmium and meat products supplied 15%.  相似文献

The aim of this study was evaluation of nitrates, nitrites and antioxidant vitamins intake in daily food rations of children aged 1-6 years. The levels of nitrites and nitrates in daily food rations were calculated using menu data and literature nitrites and nitrates content data in food products and compared with the acceptable daily intake (ADI). The percentage contribution of selected groups of products in nitrates and nitrites supply was calculated. Antioxidant vitamins level was calculated with using menu data and Food composition tables and compared to the recommendations. Nitrates content exceeded acceptable daily intake (ADI) for children aged 1-6 twice, but level of nitrites was below (88% ADI). The main food source of nitrates were vegetables supplied 90% of one. The main sources of nitrite were meat products supplied 27.6% of one, vegetables and their products--26.2% and cereals supplied 24.6% of nitrites. All calculated vitamins (A, E, C) exceeded recommendations what protected children from high level of nitrates.  相似文献

The aim of study was to determine the intake of nitrites and nitrates in daily food rations of the students' group in 2008 using 3-day dietary food records method and literature mean values of nitrates and nitrites in food products. Intakes of these compounds were calculated and compared to acceptable daily intake (ADI). The average intake of nitrites was 1.7 mg NaNO2/per person/day (28.0% of ADI), nitrates 77.3 mg NaNO3/per person/day that means 25.4% of ADI. The largest nitrites food intake was noticed for meat products supplied 56.5% of nitrites and cereals (20%). Whereas vegetables and their products supplied 76.1% of nitrates: potatoes 17.1%, cabbage 15.5%, beetroots 13.7%. Calculated nitrites intake for men was 2.4 higher than for women. There were no significant differences of nitrates intake between men and women groups.  相似文献

The nitrate and nitrite contents in diets of preschool children were evaluated. The meals were taken from one of the kindergarten near Warsaw. Colorimetric method with Griess reagent and cadmium column for nitrates reduction was used. It was seen, that diets contained to much of nitrates and nitrites as to ADI. The main sources of these compound were vegetables, potatoes, meat and meat products and cereals.  相似文献

Background: People consume nitrates, nitrites, nitrosamines, and NOCs compounds primarily through processed food. Many studies have yielded inconclusive results regarding the association between cancer and dietary intakes of nitrates and nitrites. This study aimed to quantify these associations across the reported literature thus far. Methods: We performed a systematic review following PRISMA and MOOSE guidelines. A literature search was performed using Web of Science, Embase, PubMed, the Cochrane library, and google scholar up to January 2020. STATA version 12.0 was used to conduct meta-regression and a two-stage meta-analysis. Results: A total of 41 articles with 13 different cancer sites were used for analysis. Of these 13 cancer types/sites, meta-regression analysis showed that bladder and stomach cancer risk was greater, and that pancreatic cancer risk was lower with increasing nitrite intakes. Kidney and bladder cancer risk were both lower with increasing nitrate intakes. When comparing highest to lowest (reference) categories of intake, meta-analysis of studies showed that high nitrate intake was associated with an increased risk of thyroid cancer (OR = 1.40, 95% CI: 1.02, 1.77). When pooling all intake categories and comparing against the lowest (reference) category, higher nitrite intake was associated with an increased risk of glioma (OR = 1.12, 95% CI: 1.03, 1.22). No other associations between cancer risk and dietary intakes of nitrates or nitrites were observed. Conclusion: This study showed varied associations between site-specific cancer risks and dietary intakes of nitrate and nitrite. Glioma, bladder, and stomach cancer risks were higher and pancreatic cancer risk was lower with higher nitrite intakes, and thyroid cancer risk was higher and kidney cancer risk lower with higher nitrate intakes. These data suggest type- and site-specific effects of cancer risk, including protective effects, from dietary intakes of nitrate and nitrite.  相似文献

The aim of the study was the evaluation of the phosphorus intake in 8 types of households with different family number of persons in Poland during 1994-2000. The research was conducted on the basis on households budget food consumption data and tables of food composition and nutritional value. Phosphorus intake per capita per day was compared to RDA at the safe level. The intake of phosphorus was high in all investigated households and ranged between 65-144% above lower RDA limit and 34-96% for upper one. When the family number of persons increased, the intake decreased. The main food sources of phosphorus were: bread, meat and meat products, milk and milk drinks and vegetables and mushrooms. The bread has a highest share in phosphorus supply in households maintained from non-earned sources and the lowest for the non-manual labour position one.  相似文献

目的 : 研究家庭成员的性别、年龄、职业、个人收入、是否户主等特征对食物分配的影响。方法 : 利用中美合作课题“中国健康与营养调查”1 993年的资料 ,应用多元 Logistic回归方法进行分析。本研究用“偏差分数”来表示食物分配情况。结果及结论 : 男性比女性更有可能分得较多的食物 ;45岁以上中老年人会比 1 8~ 44岁年龄组人群获得更多的食物分配 ;干部和服务行业人群在家庭内部食物分配中更易受到偏向 ,农村地区工人职业人群会得到较多的食物分配 ;经济收入较高的家庭成员在食物分配中更易受到偏爱 ;家庭中户主分得的食物所占全家的比例会比其他家庭成员要高。  相似文献

The results of the study demonstrated that the content of nitrates and nitrites in various baker's products varied from 0.96 (in wheat rolls and baguettes) to 44.07 mg KO3/kg in pumpernickel bread. In wholemeal bread, village bread, tourist bread, rye brown bread and Graham bread the content of these compounds was from 1.46 to 27.10 mg KNO3/kg. The mean content of nitrites in these bread sorts was 1.76 mg NaNo2/kg, range 0.10-4.40 mg NaNo2/kg. In white wheat flours (Wroc?aw flour, cake flour and Poznań flour) the content of nitrates ranged from 1.10 to 19.08 mg KNO3/kg, and in the dishes produced from them in household was from 0.50 to 16.33 mg KNO3/kg. The content of nitrites in these flours was in the range from 0.00 to 4.16 mg NaNo2/kg, and in the products prepared from them it was from 0.00 to 1.60 mg NaNO2/kg. Eleven types were tested also of popular biscuits, wafers, gingerbread and hard cakes in which the content of nitrates was from 3.66 to 17.72 mg/kg, and that of nitrites was from 0.00 to 8.80 mg NaNo2/kg. Considering the average consumption of these products per one person in the seashore region and the mean values of nitrates and nitrites it was calculated that they provided daily about 3.9 mg KNO3 and 0.4 NaNo2, that is about 1.8% of nitrates and 7.7% of nitrites consumed by adults in daily food ration.  相似文献

1. During 1978 and 1979, the 343 members of seventy-nine families representative of households with two adults and two or three children living in Cambridge, England, completed 7-d records of food consumption using the semi-weighed technique. Nutrient intakes were calculated using food composition tables. 2. Amongst males, the average intakes of energy and most nutrients were highest in men and boys aged 11-17 years, and lowest in boys under 5 years. Amongst females, intakes were highest in girls aged 11-17 years, and lowest in those under 5 years. At each age, intakes in males were generally higher than those in females. 3. Nutrient distribution within families was described using the ratio, intake of each subject:intake of the male head of the household. The problems inherent in using this ratio are discussed. 4. The distribution of nutrient intakes within the families was not in accordance with the recommended daily amounts (RDA). Men and young boys received more than their fair share of the family diet, while women and girls aged 5-17 years received less. 5. Estimates of dietary adequacy based on the averages of family consumption and requirements (RDA) concealed up to twofold variations in the adequacy of diet of different age-sex-groups. 6. The interpretation of dietary adequacy in household food surveys should take into account the distribution of nutrient intakes within the household, as the distribution may be substantially different from that predicted by the RDA.  相似文献

A secondary analysis of data from a study of nutritional vulnerability among 153 women in families seeking charitable food assistance was undertaken to estimate the extent and nutritional significance of at-home food preparation activity for these women. At-home food preparation was estimated from women's reported food intakes from three 24-hour recalls. The relationships between food preparation and energy and nutrient intake, food intake, and 30-day household food security status were characterized. Almost all participants (97%) consumed foods prepared from scratch at least once during the three days of observation; 57% did so each day. Both the frequency and complexity of at-home food preparation were positively related to women's energy and nutrient intakes and their consumption of fruits and vegetables, grain products, and meat and alternates. The intakes by women in households with food insecurity with hunger reflected less complex food preparation but no less preparation from scratch than women in households where hunger was not evident, raising questions about the extent to which food skills can protect very poor families from food insecurity and hunger. Our findings indicate the need for nutrition professionals to become effective advocates for policy reforms to lessen economic constraints on poor households.  相似文献

OBJECTIVE: This study examined household food insecurity of urban low-income families in Korea and the associations of the food insecurity with children's dietary intake and body size. DESIGN: Cross-sectional study. SETTING: Low-income neighborhoods in large cities. SUBJECTS: Included 370 children aged 4-12 y, who had all records on dietary intake and anthropometry as well as household food insecurity measures. RESULTS: Using the 10-item Radimer/Cornell Scale, 62.7% of the households showed some degree of food insecurity (8.6% for food insecure for family, 28.4% for food insecure for adults and 25.7% for child hunger households). Food insecurity was linearly and negatively associated with household economic conditions as well as the caretaker's use of nutrition knowledge. There were also significant associations of food insecurity with the children's dietary intakes, indicating the largest amount of nutrients for the children from the household food insecure, followed by those from the food secure, adult food insecure and child hunger groups. The household food insecure children were fatter than the food secure children. The fatter condition of the former children appeared to be related to more frequent intakes of low-quality foods. CONCLUSION: This study reports curvilinear associations between the status of household food insecurity and children's food intakes and fatness. The aim of the study was food intake of dietary fibre and soluble and insoluble fibre intake in years 1996-2005 in six types of households. According to the households budget data, and literature mean values of dietary fiber and its fraction in food products food intakes of these compounds were calculated and compared to recommendations taking into consideration main sources of them. The obtained results indicated that the mean dietary fibre intake was 23.7 g/per person/day (19.9-28.5 g/per person/day). Dietary food intake depended on type of household, and was less dependent on year. The mean soluble fibre intake was 8.8 g/per person/day (7.2-10.5 g/per person/day) and insoluble fibre was 14.9 g/day/person (12.1-18.0 g/per person/day). In researched period we observed small increase soluble fibre intake, however decline insoluble fibre intake. The main food sources of dietary fibre were cereals, especially bakery, but in case of soluble fibre vegetables and fruit and their products.  相似文献

Household food insecurity constrains food selection, but whether the dietary compromises associated with this problem heighten the risk of nutrient inadequacies is unclear. The objectives of this study were to examine the relationship between household food security status and adults' and children's dietary intakes and to estimate the prevalence of nutrient inadequacies among adults and children, differentiating by household food security status. We analyzed 24-h recall and household food security data for persons aged 1-70 y from the 2004 Canadian Community Health Survey (cycle 2.2). The relationship between adults' and children's nutrient and food intakes and household food security status was assessed using regression analysis. Estimates of the prevalence of inadequate nutrient intakes by food security status and age/sex group were calculated using probability assessment methods. Poorer dietary intakes were observed among adolescents and adults in food-insecure households and many of the differences by food security status persisted after accounting for potential confounders in multivariate analyses. Higher estimated prevalences of nutrient inadequacy were apparent among adolescents and adults in food-insecure households, with the differences most marked for protein, vitamin A, thiamin, riboflavin, vitamin B-6, folate, vitamin B-12, magnesium, phosphorus, and zinc. Among children, few differences in dietary intakes by household food security status were apparent and there was little indication of nutrient inadequacy. This study indicates that for adults and, to some degree, adolescents, food insecurity is associated with inadequate nutrient intakes. These findings highlight the need for concerted public policy responses to ameliorate household food insecurity.  相似文献

Individual food intakes and body weights were measured in 53 rural Bangladeshi households at four seasons. Energy and protein intakes (kcal/kg/d) showed significant seasonal differences for adults and young children (1-4 yr). Energy intakes of women and children were expressed as a proportion of the male household heads', to give an indicator of food allocation. Women's and older children's proportional energy intakes remained constant through the year, and in line with expected values. Young children's proportional intakes were low, girls' being lower than boys'. The only seasonal variation was an increase in young girls' proportional energy intake when household food supplies were lowest. It is concluded that women's proportional intakes are not depressed when family food intake decreases. There is evidence that young girls receive particularly low intakes.  相似文献

Low income families were interviewed to determine factors related to the number of family food servings per week. A multiple regression model indicated that participation in WIC (supplemental food program for women, infants and children), household size, and number of different income sources were associated with more family food servings per week. Background

Multiple N -nitroso compounds have been observed in animal studies to be both mutagenic and teratogenic. Human exposure to N -nitroso compounds and their precursors, nitrates and nitrites, can occur through exogenous sources, such as diet, drinking water, occupation, or environmental exposures, and through endogenous exposures resulting from the formation of N -nitroso compounds in the body. Very little information is available on intake of nitrates, nitrites, and nitrosamines and factors related to increased consumption of these compounds.

Methods

Using survey and dietary intake information from control women (with deliveries of live births without major congenital malformations during 1997-2004) who participated in the National Birth Defects Prevention Study (NBDPS), we examined the relation between various maternal characteristics and intake of nitrates, nitrites, and nitrosamines from dietary sources. Estimated intake of these compounds was obtained from the Willet Food Frequency Questionnaire as adapted for the NBDPS. Multinomial logistic regression models were used to estimate odds ratios and 95% confidence intervals for the consumption of these compounds by self-reported race/ethnicity and other maternal characteristics.

Results

Median intake per day for nitrates, nitrites, total nitrites (nitrites + 5% nitrates), and nitrosamines was estimated at 40.48 mg, 1.53 mg, 3.69 mg, and 0.472 μg respectively. With the lowest quartile of intake as the referent category and controlling for daily caloric intake, factors predicting intake of these compounds included maternal race/ethnicity, education, body mass index, household income, area of residence, folate intake, and percent of daily calories from dietary fat. Non-Hispanic White participants were less likely to consume nitrates, nitrites, and total nitrites per day, but more likely to consume dietary nitrosamines than other participants that participated in the NBDPS. Primary food sources of these compounds also varied by maternal race/ethnicity.

Conclusions

Results of this study indicate that intake of nitrates, nitrites, and nitrosamines vary considerably by race/ethnicity, education, body mass index, and other characteristics. Further research is needed regarding how consumption of foods high in nitrosamines and N -nitroso precursors might relate to risk of adverse pregnancy outcomes and chronic diseases.  相似文献

OBJECTIVE: A comprehensive, multiround survey of local food systems in a rickets-endemic area of Bangladesh was conducted to identify household-level risk factors for rickets. DESIGN: A household-level, case-control study was conducted in a rickets-endemic area, Chakaria, with planned comparisons between households with one or more rachitic child and neighboring households with no affected children. SETTING: A rickets-endemic area of southeastern Bangladesh, Chakaria. SUBJECTS AND METHODS: An interview-based survey was conducted in six villages in Chakaria with 199 households with at least one child showing physical signs consistent with rickets and 281 households with no affected children. RESULTS: Households with rachitic children in Chakaria had more children, more pregnant or lactating women, and fewer adults than unaffected households in that community. Affected households tended to rely on farming for their livelihood and tended to have less economic activity as indicated by less outstanding debt than their neighbors. Households with rickets were at significantly greater risk of pneumonia than were other households. Calcium undernutrition was severe and widespread in Chakaria due to a food system that offered very little of the element in accessible forms. Household diets were based on cereals and starchy vegetables. Rice and fish constituted the major source of calcium for most households, although dairy products, when used, were very important calcium sources, particularly for young children. In fact, the use of dairy products was the only household choice that led to substantial increases in the calcium intakes of children, and households that used dairy products tended to show increased calcium intakes for all of their members. CONCLUSIONS: The risk of a Chakarian household having a child with rickets appeared to be related to its economic status. Although this might be expected to be manifest as limitations in food access and/or use, rickets households failed to show a dietary pattern associated with rickets. Calcium undernutrition was prevalent and, thus, would appear to be a predisposing factor for rickets; however, calcium undernutrition was prevalent in Chakarian households with and without rickets. Therefore, it is probable that another precipitating factor(s) play a role(s) in the etiology of rickets in Chakaria.  相似文献

ObjectiveThis study aimed to examine the dietary intake of Salvadoran households according to perceived access to healthy meals (PAHD), and to identify household characteristics associated with diet quality and PAHD.MethodsSecondary data analysis with a sample of 139 Salvadoran households from resource-poor communities in El Salvador. Chi-square tests and ANOVA were used to assess differences in dietary intake across households classified according to PAHD.ResultsHigh-PAHD households had higher women's education, household food security levels, overall diet quality, and variety, and higher intakes of animal products, fats, cholesterol, vitamin C, and sodium (P < .05). Diet quality was not associated with the household characteristics studied.Conclusions and ImplicationsOverall diet quality was associated with higher levels of PAHD, but some differences in intakes were not as expected, such as higher intakes in foods and nutrients associated with low-quality diets, among high PAHD households.  相似文献

A study of food insecurity and nutritional adequacy was conducted with a sample of 153 women in families receiving emergency food assistance in Toronto, Canada. Contemporaneous data on dietary intake and household food security over the past 30 d were available for 145 of the women. Analyses of these data revealed that women who reported hunger in their households during the past 30 d also reported systematically lower intakes of energy and a number of nutrients. The effect of household-level hunger on intake persisted even when other economic, socio-cultural, and behavioral influences on reported dietary intake were considered. Estimated prevalences of inadequacy in excess of 15% were noted for Vitamin A, folate, iron, and magnesium in this sample, suggesting that the low levels of intake associated with severe household food insecurity are in a range that could put women at risk of nutrient deficiencies.  相似文献
