To evaluate glucose and insulin responses after ingestion of snacks, we gave healthy, nondiabetic male subjects carbohydrate equivalent (25 g) snacks or isocaloric (265 kcal) snack meals in a random crossover design. Individual snacks composed of either a milk chocolate bar, granola bar, chocolate milk, peanut butter cups, yogurt, or potato chips produced similar glucose response curves. Plasma glucose concentrations were lower (p less than or equal to 0.05) at 30 and 60 min postprandially than after a corresponding oral glucose challenge. In contrast, insulin responses to the snacks exhibited a two-fold variation in peak values. Isocaloric snack meals of cereal-milk, cheese sandwich-milk, and peanut butter sandwich-chocolate milk produced glucose and insulin responses similar to individual snacks. Although glucose concentrations at 60 min fell somewhat below baseline values after each snack, clinical hypoglycemia was not evident. These data clearly indicate a similarity in glycemic response among normal individuals consuming a variety of common snacks.  相似文献

Corner stores are part of the urban food environment that may contribute to obesity and diet-related diseases, particularly for low-income and minority children. The snack foods available in corner stores may be a particularly important aspect of an urban child’s food environment. Unfortunately, there is little data on exactly what snack foods corner stores stock, or where these foods come from. We evaluated snack foods in 17 Philadelphia corner stores, located in three ethnically distinct, low-income school neighborhoods. We recorded the manufacturer, calories, fat, sugar, and sodium for all snack items, excluding candy and prepared foods. We then compared the nutritive content of assessed snack items to established dietary recommendations and a school nutrition standard. In total, stores stocked 452 kinds of snacks, with only 15% of items common between all three neighborhoods. Total and unique snacks and snack food manufacturers varied by neighborhood, but distributions in snack type varied negligibly: overall, there were no fruit snacks, no vegetable snacks, and only 3.6% of all snacks (by liberal definition) were whole grain. The remainder (96.4% of snacks) was highly processed foods. Five of 65 manufacturers supplied 73.4% of all kinds of snack foods. Depending on serving size definition, 80.0-91.5% of snack foods were “unhealthy” (by the school nutrition standard), including seven of 11 wholegrain products. A single snack item could supply 6-14% of a day’s recommended calories, fat, sugar, and sodium on average (or 56-169% at the extreme) for a “typical” child. We conclude that corner store snack food inventories are almost entirely unhealthful, and we discuss possible implications and next steps for research and intervention.  相似文献

The replacement in the diet of refined carbohydrate and fat with fibre and protein has been shown to promote satiety and improve glucose and insulin profiles. It is less clear whether the macronutrient composition of individual foods such as snacks have any meaningful impact on metabolic parameters and satiety. We examined if the consumption of higher protein higher fibre snack bars would result in reducing outcome measures such as food intake and glucose and insulin patterns compared to a conventional isocaloric high fat high refined carbohydrate snack bar. Twenty three women were randomized in a single blind cross over study with 2 interventions, a high fat high sugar snack bar and a comparatively higher protein, higher fibre snack bar intervention. Snack bars were eaten at mid morning and mid afternoon, and a standard breakfast and ad libitum buffet lunch. The glucose and insulin responses over 9 hours were significantly lower (P = 0.014 and P = 0.012 respectively) during the high protein snack bar intervention. Peak glucose levels were also 16% lower after the morning HP bar (P <0.001). The morning high protein bar reduced the energy intake at the buffet lunch meal by 5% (4657 +/- 1025KJ vs 4901 +/- 1186KJ, P < 0.05). Altering the macronutrient composition of a snack bar can assist in reducing the energy intake at a subsequent meal and improve short term glucose and insulin profiles.  相似文献

BACKGROUND: Several epidemiologic studies suggest that snacking may play an etiologic role in obesity. OBJECTIVE: We assessed the behavioral and metabolic consequences of a high-carbohydrate (HC) or high-protein (HP) snack consumed 215 min after lunch, thereby investigating ways that snacking in a nonhungry state could be involved in the etiology of obesity. DESIGN: Eight lean young men attended 3 sessions (basal, HP snack, and HC snack) in a counterbalanced order with 2 wk between sessions. During all sessions, subjects were time-blinded while we measured the temporal pattern of plasma glucose, insulin, and fatty acid concentrations; hunger ratings; substrate oxidation; and energy expenditure from 215 min after the beginning of lunch until the spontaneous dinner request. RESULTS: Compared with the basal (no snack) session, the HP snack delayed the spontaneous dinner request (by 38 +/- 16 min, P < 0.05) but the HC snack did not. Energy and macronutrient intakes at dinner were unaffected by both snacks. After the HP snack, plasma fatty acid concentrations were lower (P < 0.05), but glucose and insulin were unchanged compared with the basal session. After the HC snack, plasma glucose and insulin concentrations were higher and plasma fatty acid concentrations were lower than those in the basal session (P < 0.05 for both). Both snacks promoted carbohydrate utilization (P < 0.05), and the HC snack depressed fat oxidation (P < 0.05). CONCLUSION: This study showed that a snack consumed in a satiety state has poor satiating efficiency irrespective of its composition, which is evidence that snacking plays a role in obesity.  相似文献

OBJECTIVE: To determine if preschool children would eat and waste different amounts of food when served snacks in a regular versus a "cute" form. DESIGN: Preschool children were served 6 snacks in a cute form and the same snacks in a regular form using the same food components during 24 snack sessions. Children served as their own controls. SUBJECTS/SETTING: Thirty-nine children ages 36 to 60 months (20 girls, 19 boys) in a university child development laboratory. MAIN OUTCOME MEASURES: Snack portions eaten and wasted and time for eating. ANALYSIS: Data were analyzed using a 2 3 6 factorial analysis of variance, with snack form (cute or regular) and snack components as the 2 factors. RESULTS: There was no significant difference in children's snack consumption or waste between cute and regular versions of snacks. It took children an average of 2 minutes longer to eat the cute snacks. CONCLUSIONS AND IMPLICATIONS: There is no apparent advantage to serving cute snacks in terms of increased consumption or decreased waste. Further research should be conducted on children's mealtime behaviors when served cute foods to learn more about children's responses to the overall appearance of their food.  相似文献

The present study tested whether foods categorized as meals reduce subsequent intake more than isocaloric foods categorized as snacks. The study was repeated three times with variations. In each variation we manipulated whether subjects received meal or snack foods in an isocaloric load. In Variation 1, subjects consumed less following a load of meal foods than snacks. Variation 2 found this effect to be short-term, affecting food choice 20 min following a load but not 3 h later. Variation 3 demonstrated: (1) this effect occurs independent of the effects of the weights of foods, and (2) this effect varies specifically with subject perceptions of foods (i.e. whether they are part of a meal or snack). These results are discussed in terms of how cognitive representations of preload foods can influence subsequent consumption.  相似文献

The snack patterns of 225 adolescents selected from four metropolitan and three rural schools in eastern Tennessee were examined with the use of 24-hour food records kept on a school day. Most (89%) of the respondents ate at least one snack on the day of the survey. Morning snacks, most of which were obtained from school stores or school vending machines, were more likely to include candies and salty snack foods than were afternoon and evening snacks, most of which were eaten at home. Breads and cereals were popular choices for afternoon and evening snacks. Carbonated beverages and desserts were popular during all time periods. Nutrient densities of snacks were low in all time periods but lowest in morning snacks. Nutrients present in lowest amounts were iron, calcium, and vitamin A. Snack patterns of boys and girls were similar, although boys' intakes of energy, calcium, and riboflavin were higher than those of girls.  相似文献

This investigation was designed to compute the total sodium intake from meals and snacks consumed by selected college students. Most students used carbonated beverages, candies, gums, cookies, and salted snack items. They consumed salted snack items mostly as evening snacks. Mean sodium intake was found to be 3,904 mg. for men and 2,628 mg. for women, without taking into consideration the use of table salt. Sodium density per kilocalorie per day was 1.40 and 1.41 for men and women, respectively, suggesting that the differences in intakes were due to women's lower caloric intake. Sodium intake was greater from regular meals than from snack foods. Evening snacks contributed more to the daily sodium intake than morning and afternoon snacks. It can be concluded that sodium intake of college students needs careful assessment. According to the Food and Nutrition Board, the most effective way to maintain intake within the suggested range is to reduce the amount of salt added at table or in cooking and to reduce moderately the selection of obviously salty foods (9). College students need to be made aware of the sodium content of foods they select for lunch, dinner, and evening snacks, as well as the amount of salt they add at the table.  相似文献

Although most eating occurs in a social context, the impact of peer influence on child food consumption and selection of healthy and unhealthy snacks has not been the object of systematic experimental study. The present experiment assessed the effects of peer interaction on energy intake and food choices in 18 overweight and 21 non-overweight youth. Participants had access to high and low-calorie food items and were provided with several games as alternatives to eating. On one occasion, participants were tested alone and on another occasion they were tested in dyads with an unfamiliar peer. Consistent with previous results, we found that overweight children ate substantially more when alone than when in the presence of a peer and also more when alone than the lean children in the same condition. Non-overweight youths' food intake was unaffected by the social context. Findings also indicated that the best predictor of whether participants consumed healthy snack foods was if the other youth in the dyad also consumed healthy snack foods. These findings suggest that the presence of peers can influence overweight children's energy intake and also influence healthier food selection in both overweight and non-overweight children.  相似文献

This study investigated how the air content of a familiar snack food affected energy intake and whether varying the method of serving the snack modified intake. We tested two versions of an extruded snack (cheese puffs) that were equal in energy density (5.7 kcal/g), but differed in energy per volume (less-aerated snack: 1.00 kcal/ml; more-aerated snack: 0.45 kcal/ml). In a within-subjects design, 16 women and 12 men consumed the snacks ad libitum in the laboratory during four afternoon sessions. A standard volume (1250 ml) of each snack was served once in a bowl and once in an opaque bag. Results showed significant differences in intake of the two snacks by energy (p=0.0003) and volume (p<0.0001); subjects consumed 21% less weight and energy (70+/-17 kcal) of the more-aerated snack than the less-aerated snack, although they consumed a 73% greater volume of the more-aerated snack (239+/-24 ml). These findings suggest that subjects responded to both the weight and volume of the snack. Despite differences in intake, hunger and fullness ratings did not differ across conditions. The serving method did not significantly affect intake. Results from this study indicate that incorporating air into food provides a strategy to reduce energy intake from energy-dense snacks.  相似文献

We assessed the validity of the emotional eating scale (EES) by examining whether the EES predicted food intake following two negative mood inductions. Participants underwent mood inductions for anxiety, anger and neutral mood, then received snack foods in a sham palatability test. EES anxiety, but not anger, predicted intake. Participants high on EES anxiety consumed more snacks during the anxiety mood induction, whereas participants low on EES anxiety consumed less snacks. Results suggest that EES anxiety is a predictor of anxiety-driven eating and may be used to assess emotional eating when direct observation of intake is not possible.  相似文献

ABSTRACT: BACKGROUND: In the past decade, the proportion snacking has increased. Snack foods consumed are predominantly not nutritious foods. One potential venue to increase children's diet quality is to offer healthy snack foods and we explored if shaped snack foods would lead to increased consumption. METHODS: We investigated the consumption of high-fiber snacks (banana bread, pancakes, and sandwiches) served either in normal (round, square) or shaped (heart, hands, animals) form to preschoolers 2-5 years old attending a local child care center (n=21). The 9 weeks long, prospective, cross-over intervention study was designed to expose each child repeatedly to each snack in each shape (4 times per snack). Snacks were served as morning or afternoon snack and caretakers' reports were used to account for the child's consumption of a meal preceding the study snack (breakfast or lunch). RESULTS: There was no significant difference in snack consumption between the shaped and normal snacks. However, the mean energy intake from snacks was significantly greater for Caucasian children compared with Asian children. Further, Asian children consumed much less banana bread than the other two snacks. Overall, children who had not eaten breakfast or lunch prior to the morning or afternoon snack ate significantly more calories from the snacks (84.1 kcal, p-value<0.0001). CONCLUSION: Findings of this study confirm previous research that the shape of the foods does not affect snack consumption in children. However, we also report two unexpected findings: a) the strong interaction between ethnicity and snack consumption and b) that Asian children consumed much less banana bread than Caucasian children. The role of children's ethnic background profoundly affects snack preference and must be considered in the study of children's eating behaviors and in interventions to promote healthy eating habits.  相似文献

The effects of food snacks consumed in the late afternoon on cognitive performance in college-aged men were investigated in two experiments. The effects of the snacks were tested in the same subjects after they either consumed or skipped lunch. In the first experiment, the calorie-rich snack was a confectionery product, while in the second experiment, the snack was fruit-flavored yogurt. In both experiments, performance on cognitive tasks following consumption of the calorie-rich snack was compared to performance following consumption of a very low calorie snack (lemon-lime flavored diet soda without caffeine). Four cognitive tasks were employed: digit span recall (forward and backward), arithmetic reasoning, reading, and attention. In both experiments, subjects recalled significantly more digits in the backward digit span test and responded significantly faster in the attention task when they had consumed the calorific snack than when they had consumed the diet soft drink. Additionally, in Experiment 2, subjects solved significantly more arithmetic problems and solved these problems in significantly less time after eating a fruit-flavored yogurt than after consuming the diet soft drink. Results of these experiments suggest that a late afternoon energy-containing snack can have positive effects on cognitive performance on tasks that require sustained attention.  相似文献

The purpose of this study was to examine the relationship between the snack intake and snack availability of elementary school children. Data analyzed were from 722 4th to 6th graders' food availability and food intake questionnaires collected in the Nutrition and Health Survey in Taiwan Elementary School Children 2001-2002. The snacks commonly eaten were divided into two groups. Healthy snacks included dairy products, 100% fruit juice and fresh fruits. Unhealthy snacks included high fat/sugar snacks, cookies, candy, carbonated/sugared beverages and fast food. Structural equating modeling was used to test the models that describe the availability and intake of two snack groups. Results indicated that parents' intake and children's preference were major predictors of children intake of both healthy and unhealthy snacks. Other than that, the intake of unhealthy snacks was positively associated with "purchase by children themselves" but not the intake of healthy snacks, which was influenced predominantly by "present in home". The results support the perception that a positive family food environment is important for improving children's diet quality. To build a healthy family food environment, parents have to not only provide healthy snacks but also limit the unhealthy snacks in home. In addition to that, the role modeling of parents as eating healthy snacks instead of unhealthy snacks themselves may help children to develop similar behaviors.  相似文献

The present study examined associations between food marketing exposure and adolescents’ food choices and reported consumption of energy-dense and nutrient-poor (EDNP) foods. A cross-sectional survey of 12,188 Australian secondary students aged 12-17 years was conducted, using a web-based self-report questionnaire. Measures included students’ level of exposure to commercial television and non-broadcast types of food marketing, whether they had tried a new product or requested a product they had seen advertised, and their reported consumption of fast food, sugary drinks and sweet and salty snacks. Results indicated greater exposure to commercial television, print/transport/school food marketing and digital food marketing were all independently associated with students’ food choices. High commercial television viewers (>2 h/day) were more likely to report higher consumption of EDNP foods (ORs ranged from 1.31 for fast food to 1.91 for sweet snacks). Some associations between digital food marketing exposure and students’ eating behaviors were found; however, print/transport/school food marketing was only related to sweet snack consumption. These study results suggest that cumulative exposure to television food advertising and other food marketing sources are positively linked to adolescents’ food choices and eating behaviors. Policy changes to restrict food marketing to young people should include both television and non-broadcast media.  相似文献

ObjectiveThis paper reports the results of two experiments using a laboratory analog to examine the influence of taxes and subsidies on youth's snack food purchases when alone (Experiment 1) and when in the presence of a same-gender peer (Experiment 2).MethodAdolescents (12–14-years-old) completed a purchasing task, during which prices of snack foods were manipulated, either alone in Experiment 1 (N = 37) or in the presence of an unfamiliar peer in Experiment 2 (N = 52).ResultsIn both experiments, purchases of unhealthy snacks decreased and purchases of healthy snacks increased when the price of unhealthy snacks were taxed (increased). In Experiment 1 (alone), participants did not purchase more healthy snacks when the price of these snacks were subsidized (decreased). However, in Experiment 2 (when participants were in the presence of a peer), participants purchased more healthy snacks when these snacks were subsidized.ConclusionTaxes and subsidies affect adolescents' snack purchasing, as does the presence of peers. The results of this study highlight factors that influence healthy and unhealthy snack purchasing behavior in young adolescents.  相似文献

Forty-one percent of elementary schoolchildren bring lunch to school on any given day. Forty-five percent bring snacks. Surprisingly, little is known about the foods and beverages they bring. This cross-sectional analysis of baseline data from the GREEN (Growing Right: Eco-friendly Eating and Nutrition) Project Lunch Box Study sought to characterize foods and beverages brought from home to school by elementary schoolchildren and compare the quality of packed lunches with National School Lunch Program standards and packed snacks with Child and Adult Care Food Program requirements. Lunches and snacks from 626 elementary schoolchildren were assessed and evaluated using digital photography and a supplemental food checklist. Food and beverage types most likely to be provided for lunch were sandwiches (59%), snack foods (42%), fruit (34%), desserts (28%), water (28%), and sugar-sweetened beverages (24%). Twenty-seven percent of lunches met at least three of five National School Lunch Program standards. At snack, snack foods (62%), desserts (35%), and sugar-sweetened beverages (35%) were more common than fruits (30%), dairy foods (10%), and vegetables (3%). Only 4% of snacks met two of four Child and Adult Care Food Program standards. Future research is needed to understand the multiple determinants of food-packing behavior, including constraints faced by families. School wellness policies should consider initiatives that work collaboratively with parents to improve the quality of foods brought from home.  相似文献

BackgroundCurrent dietary guidelines recommend avoiding foods and beverages with added sugars and higher sodium before age 2 years.ObjectiveThe aim was to describe daily snack food intake (frequency and total energy) and the associations with overconsumed nutrients (added sugars, sodium, and saturated fats) and child weight-for-length z scores.DesignA cross-sectional, secondary analysis of baseline data from an ongoing longitudinal intervention was conducted.Participants and settingA sample of 141 caregivers with infants (aged 9 to 11 months) and toddlers (aged 12 to 15 months) was recruited in Buffalo, NY, between 2017 and 2019.Main outcome measuresThree 24-hour dietary recalls were used to categorize 'sweet and salty snack foods' or 'commercial baby snack foods' based on the US Department of Agriculture What We Eat in America food group classifications and estimate nutrient intakes. Child recumbent length and weight were measured by trained researchers.Statistical analysisDaily frequency (times/day), energy (kcal/day), and overconsumed nutrients from snack food intake were calculated. Multivariable regression models examined associations between the frequency of and energy from snack food intake with overconsumed nutrients and child weight-for-length z scores.ResultsInfants consumed snack foods on average 1.2 times/day contributing 5.6% of total daily energy, 19.6% of added sugars, and 6.8% of sodium. Toddlers consumed snack foods on average 1.4 times/day contributing 8.9% of total daily energy, 40.0% of added sugars, and 7.2% of sodium. In adjusted models including all children, greater frequency of sweet and salty snack food intake, but not commercial baby snack foods, was associated with higher weight-for-length z scores.ConclusionsSnack foods are frequently consumed by infants and toddlers and contribute to the intake of overconsumed nutrients such as added sugars and sodium. Given the current guidelines to avoid added sugars and higher sodium before age 2 years, additional recommendations related to nutrient-dense snack intake may be beneficial.  相似文献
