Dietary intake levels of calcium and magnesium, as well as calcium/magnesium ratios, were assessed for 12 age/sex groups of the U.S. population through use of USDA's 1977-78 Nationwide Food Consumption Survey. Results indicated that a majority of the U.S. population consumed less than recommended amounts (NRC-RDA) of both calcium and magnesium. Approximately 60% of 0 to 5 year olds and 40% of 6 to 11 year olds had average daily calcium intakes of less than 800 mg, while 60 and 85% of the male and female adolescents, respectively, had intakes below the recommended level of 1,200 mg/day. Approximately 80 to 85% of the adult female groups and 50 to 65% of the adult male groups had average intakes below recommended levels. With the exception of children ages 0 to 5 years, the average daily magnesium intakes of all age/sex classes were below the NRC-RDA. Magnesium consumption was particularly low among adolescent females, adult females, and elderly men, with 85, 80-85 and 75%, respectively, of the population groups having average magnesium intakes below their respective NRC-RDA. Furthermore, the majority of the population groups did not consume appropriate proportions of these two minerals to obtain optimal calcium/magnesium ratios. While adolescent females and adult females had more appropriate ratio values than other segments of the population, these ratios principally resulted from their very low intakes of calcium. The most inappropriate calcium/magnesium ratios, observed for children, male adolescents, and young adult males, were, in general, due to their more appropriate calcium intakes and their low magnesium intakes.  相似文献

OBJECTIVE: To define fatty acid and macronutrient intakes in a rural Chinese preschool population, and relate these intakes to anthropometric indices. DESIGN: Cross-sectional survey of anthropometry and diet (three 24-h recalls). National Centers for Health Statistics/World Health Organization growth reference charts were used to determine the prevalence of malnutrition (z-scores less than -2 standard deviation (s.d.) below the mean): height-for-age (stunted), weight-for-age (underweight), weight-for-height (wasted) and mid-upper-arm-circumference-for-age (low fat/muscle). SUBJECTS AND SETTING: A total of 196 children aged 1-5 years old were volunteered by their families to participate in the survey, located in Heqing County, Yunnan Province, China. RESULTS: The respective prevalence of stunting, underweight, wasting and low fat/muscle was: 38, 21, 2 and 8%. Daily intakes of linoleic acid (LA; 18:2n-6), alpha-linolenic acid (LNA; 18:3n-3), arachidonic acid (AA; 20:4n-6) and docosahexaenoic acid (DHA; 22:6n-3), averaged for all children, were 2 100+/-1200, 300+/-250, 55+/-35 and 30+/-140 mg/day, respectively. As percent of total fat intake, LA contributed 11.9%, LNA 1.8%, AA 0.3% and DHA 0.2%. Height-for-age and weight-for-age z-scores were negatively correlated with g/kg/day intake of LA and AA (P<0.05). Weight-for-height z-score was negatively correlated with AA g/kg/day intake (P<0.05). CONCLUSIONS: This study provided polyunsaturated fatty acids (PUFA) intakes in rural preschool children in a developing country. The associations of PUFA intake with early childhood growth suggest that growth in preschool-aged children could be significantly and specifically related to n-6 fatty acid intakes.  相似文献

Will dietary omega-3 fatty acids change the composition of human milk?   总被引:6,自引:0,他引:6  
The most abundant long-chain polyunsaturated fatty acid in brain and retinal lipids is docosahexaenoic acid (DHA, C22:6 omega 3). It becomes incorporated into nerve tissues mostly in utero and during the 1st yr of life. DHA is derived in humans either performed in the diet or by hepatic synthesis from dietary linolenic acid (C18:3 omega 3). Since human milk contains DHA, this study was designed to see if increased dietary DHA would be reflected in a higher DHA content in human milk. Eight lactating women were given supplements of a fish oil concentrate rich in omega-3 fatty acids, including DHA (11% of fatty acids). Six women took 5 g/day of fish oil for 28 days; five women consumed 10 g/day for 14 days; and one woman consumed 47 g/day for 8 days. Each intake level of fish oil produced significant dose-dependent increases in the DHA content of milk and plasma. Base-line DHA levels in milk were 0.1 +/- 0.06% of total fatty acids. Five g/day of fish oil raised the levels to 0.5 +/- 0.1% (p less than 0.001); 10 g/day raised DHA levels to 0.8 +/- 0.1% (p less than 0.001); and 47 g/day produced DHA levels of 4.8%. The results of this study indicated that relatively low intakes of dietary DHA significantly elevated milk DHA content. This would clearly elevate the infant's DHA intake and might have implications for brain and retinal development.  相似文献

Proximate composition, minerals, fatty acids, and sterols were determined for eight species of shellfish commonly marketed in the Northwest. Moisture and total lipid content varied with the size of the species, with more variation in mollusca than in crustacea; total lipid content ranged from 0.7% in sea scallops to 3.1% in blue mussels but only from 1.2% in Dungeness crab to 1.3% in pink shrimp. The mineral content was highly variable; the mineral content of Northwest samples tended to be lower than that reported in other studies. Generally, shellfish are good sources of zinc, and Pacific oysters, blue mussels, and Manila clams are also good sources of iron. Five fatty acids (16:0, 16:1, 18:1, 20:5n-3, and 22:6n-3) represented from 60% to 84% of the fatty acid content. Palmitic acid ranged from 13% to 32% of the total fatty acids. Long-chain n-3 polyunsaturated fatty acids were predominant (37.6% to 54.3%), with sea scallops containing more than 50%; n-6 polyunsaturated fatty acids ranged from 1.5% to 6.5%. In crustacea, cholesterol was the primary sterol, and brassicasterol was the only other measurable sterol. In all mollusca except California squid, cholesterol averaged 37 mg/100 gm and ranged from 23% to 39% of the total sterols. In squid, cholesterol, at 231 mg/100 gm, was the only measurable sterol. We conclude that shellfish vary widely in their nutrient content but, in general, are valuable additions to the diet.  相似文献

The main purpose of this work was the analysis of the composition of fatty acids and cholesterol. The investigation was done among 143 students, with 3-day dietary records method. The research was carried out in the years 2007 and 2008. The average fat intake was 92.7% of RDA. The intakes of saturated, monounsaturated and polyunsaturated fatty acids were 99.4%, 71.2% and 73.3% of recommended levels, respectively. The average intake of cholesterol was in accordance with recommended value 300 mg (91.00%). Intake of fat, fatty acids and cholesterol depended on gender Intake offat, saturated and monounsaturated fatty acids depended on state of health additionally. Intake of saturated fatty acids was different according to place of dwelling. In case of men too much energy from fat (37.9%) was recorded and too much intake of cholesterol (about 58%).  相似文献

Dietary intakes of fat and fatty acids were examined in children randomly selected from a biracial community, Bogalusa, LA. Between two 10-yr-old groups examined 3 yr apart, temporal trends of 1) higher intakes of polyunsaturated fatty acids, linoleic and linolenic acids, and 2) lower intakes of animal fat, saturated fatty acids, and palmitic acid were documented. No racial differences were found, and the only difference between sexes was for myristic acid (boys greater than girls). Longitudinal comparisons of a cohort of 148 children examined at both 10 and 13 yr showed higher intakes over time of unsaturated fatty acids, polyunsaturated fatty acids, vegetable fat, oleic, linoleic, and linolenic acids, and lower intakes of cholesterol, saturated fatty acids, animal fat, and myristic acid. The percentage of energy intake from fat, saturated fatty acids and polyunsaturated fatty acids was quite similar to other reports of US children and adults. Few children's intakes of cholesterol, fat, and fatty acids were compatible with current recommendations for prudent diets. Patterns of dietary fat and fatty acid intake of Bogalusa children reflect reported food market trends of increased use of vegetable fats.  相似文献

Trends in fatty acid intakes of 10-year-old children, 1973 to 1982   总被引:1,自引:0,他引:1  
Diets of four groups of 10-year-old children (no. = 871, 30% black, 70% white) were examined over 10 years with 24-hour dietary recalls to study temporal trends in cholesterol, fat, and fatty acid intakes in a community. Boys had higher intakes per day and per kilogram body weight than girls for all nutrients (p less than .0001), but there were no sex differences in nutrients per 1,000 kcal. The only racial difference detected was a higher myristic acid intake in whites (p less than .02). There was a 16% decline in dietary cholesterol intake between 1978 and 1982. Three shifts in fatty acid intake increased the P:S ratio from 0.29 in 1973 to 0.45 in 1978: (a) a 5% decline in oleic acid, coupled with a 5% rise in linoleic acid; (b) a quadrupling of linolenic acid; and (c) less stearic and more myristic acid, with palmitic acid unchanged. Total fat intake provided 38% of the calories in each survey, but the changes in proportions of fatty acids paralleled trends in food consumption patterns and nutrient sources. Despite the changes, few children met prudent diet recommendations, and serum total cholesterol and very-low-density-lipoprotein cholesterol levels did not change over time.  相似文献

This report presents dietary intake estimates for fats and fatty acids from the National Health and Nutrition Examination Survey, 1999-2000, for the U.S. population. These include: total fat; total saturated, monounsaturated, and polyunsaturated fat; individual fatty acids; and cholesterol. Fat intakes are estimated from one 24-hour dietary recall interview. Population means, medians, and standard errors of the mean are weighted to produce national estimates and are presented by sex and age groups. Assessment of dietary intakes is an important part of monitoring the nutritional status of the U.S. population.  相似文献

To evaluate the association between omega-3 polyunsaturated essential fatty acids and depression, data regarding prevalence rates of self-reported depression and median daily dietary intakes of these fatty acids were obtained from an age-stratified, population-based sample of women (n = 755; 23-97 year) in the Barwon Statistical Division of south-eastern Australia. A self-report questionnaire based on Diagnostic and Statistical Manual-IV criteria was utilised to determine 12-month prevalence rates of depression in this sample, and data from biennial food frequency questionnaires examining seafood and fish oil consumption over a 6-year period were examined. Differences in median dietary intakes of omega-3 fatty acids between the depressed and nondepressed cohorts were analysed and results were adjusted for age, weight and smoking status. No significant differences in median intakes were identified between the two groups of women (median, interquartile range; depressed = 0.09g/day, 0.04-0.18 versus nondepressed = 0.11 g/day, 0.05-0.22, p = 0.3), although overall average intakes of omega-3 fatty acids were lower than recommended and rates of depression within this sample higher than expected, based on previous data. Further research that takes into account ratios of omega-6 to omega-3 polyunsaturated essential fatty acids, as well as other dietary sources of omega-3 fatty acids, is warranted.  相似文献

Summary  The very long chain (VLC) n -3 polyunsaturated fatty acids (PUFA), particularly eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), are widely recognised to have beneficial effects on human health. However, recommended intakes of VLC n -3 PUFA (450 mg/day) are not being met by the diet in the majority of the population mainly because of low consumption of oil-rich fish. Current mean intake of VLC n -3 PUFA by adults is estimated to be about 282 mg/day with EPA and DHA contributing about 244 mg/day. Furthermore, the fact that only about 27% of adults eat any oil-rich fish (excluding canned tuna) and knowledge of the poor conversion of α-linolenic acid to EPA and DHA in vivo , particularly in men, leads to the need to review current dietary sources of these fatty acids. Animal-derived foods are likely to have an important function in increasing intake and studies have shown that feeding fish oils to animals can increase the EPA and DHA content of the resulting food products. This paper highlights the importance of examining current and projected consumption trends of meat and other animal products when exploring the potential impact of enriched foods by means of altering animal diets. When related to current food consumption data, potential dietary intakes of EPA+DHA from foods derived from animals fed enriched diets are calculated to be about 231 mg/day. If widely consumed, such foods could have a significant impact on progression of conditions such as cardiovascular disease. Consideration is also given to the sources of VLC n -3 PUFA in animal diets, with the sustainability of fish oil being questioned and the need to investigate the use of alternative dietary sources such as those of algal origin.  相似文献

OBJECTIVE: To study the lipoprotein distribution of supplemented coenzyme Q10 (CoQ10), vitamin E, and polyunsaturated fatty acids (PUFA). DESIGN: Balanced three-period crossover study. SETTING: University research unit. SUBJECTS: Eighteen apparently healthy free-living non-smoking volunteers (nine women, nine men), mean age 26 +/- 3 y, recruited among the university students; no dropouts. INTERVENTIONS: Three supplementation periods of 10 days: 100 mg/day CoQ10, 350 mg/day D-alpha-tocopherol, and 2 g/day concentrated fish oil. Fasting venous blood samples were collected twice before the first period and then after each period. Plasma and isolated lipoproteins were analysed for cholesterol, triacylglycerol, alpha- and gamma-tocopherol, CoQ10, and fatty acid composition. RESULTS: Significant (P < 0.05) increase in CoQ10 and alpha-tocopherol occurred in all lipoprotein classes after supplementation. CoQ10 was primarily incorporated into low-density lipoprotein (LDL). alpha-tocopherol and fish oil n-3 PUFAs had similar patterns. They were equally distributed between LDL and high-density lipoprotein (HDL), with a smaller part in VLDL. The total sum of PUFA was unchanged following all supplementations, but fish oil increased the amount of n-3 fatty acids at the expense of n-6 fatty acids. CONCLUSION: Lipoprotein distribution of CoQ10 is markedly different from that of alpha-tocopherol, suggesting that they may be metabolised by distinct routes. alpha-Tocopherol is distributed similarly to n-3 fatty acids, thus providing protection on location for the oxidatively labile PUFAs.  相似文献

Dietary intake of long-chain polyunsaturated fatty acids (EPA and DHA) was analysed, stratified by sex and age groups, using data from the German Nutrition Survey 1998. The median intake of both fatty acids combined (EPA and DHA) was 141 mg per day among women and 186 mg among men. In all age groups, women consumed less EPA and DHA than men, partly because of lower total intake. The lowest median intake was observed among women aged 18-24 years (84 mg) and the highest median intake among men aged 45-54 years (217 mg). The main sources of these fatty acids are fish (68%), eggs (12%), poultry (7%), meat and sausages (7%). The remaining 6% of EPA and DHA is supplied by bakery products.  相似文献

A case-control study concerning the association between diet and peripheral arterial occlusive disease was conducted in Athens, Greece. The case series consisted of 100 patients with this disease, whereas controls were 100 patients with conditions requiring minor surgical care who were admitted to the same teaching hospital. Diet was ascertained through a semiquantitative food frequency questionnaire. Nutrient intakes for individuals were estimated by multiplying the nutrient content of a selected typical portion size for each specified food item by the frequency that the food was used per month and summing these estimates for all food items. Data were analyzed using multiple logistic regression procedures, controlling for total energy intake by taking nutrient residuals and by using multivariate nutrient density models. Saturated fatty acids (odds ratio (OR) and 95% confidence interval (CI) contrasting the 75th centile (upper) with the 25th centile = 1.96 and 1.14-3.39), proteins (OR = 2.86, 95% CI 1.47-5.55), and dietary cholesterol (OR = 6.07, 95% CI 2.74-13.46) were associated with increased risk of peripheral arterial occlusive disease, whereas polyunsaturated fatty acids (OR = 0.48, 95% CI 0.24-0.93) and crude fiber (OR = 0.33, 95% CI 0.17-0.64) were related to reduced risk. Monounsaturated fatty acids and, by inference, olive oil occupy an intermediate neutral position between polyunsaturates and saturates (corresponding OR = 1.14, 95% CI 0.68-1.91). Higher intakes of fiber and vitamin C were associated with lower risk of peripheral arterial occlusive disease. The low occurrence of atherosclerotic diseases in Greece and other Mediterranean countries may be due to the substitution of olive oil in place of saturated fats and/or the consumption of a diet high in vegetables, fruits, and other fiber-containing foods.  相似文献

OBJECTIVE: The long-term effects of fetal hyperinsulinemia, time course of changes in liver and very-low-density lipoprotein (VLDL) lipid levels and fatty acid compositions were investigated in obese offspring of streptozotocin-induced mildly diabetic rats. RESEARCH METHODS AND PROCEDURES: Mild hyperglycemia in pregnant rats was induced by intraperitoneal injection of streptozotocin on day 5 of gestation. Control pregnant rats were injected with citrate buffer. Liver and VLDL lipids and fatty acids were analyzed in offspring at different ages. RESULTS: At birth, obese pups had higher VLDL triglyceride levels, saturated fatty acids, and C20:4n-6. They also had lower C18:2n-6 proportions in VLDL triglycerides, phospholipids, and cholesteryl esters than controls pups. In 1-month-old male and female obese rats, VLDL and liver lipid amounts were similar to those in their respective controls; however, high levels of C18:2n-6 and C20:4n-6 were noted in liver and VLDL lipids. At the age of 2 months, liver and VLDL triglyceride levels were higher in obese females than in control females. Fatty acid abnormalities seen in obese rats included low C18:3n-3 and high C22:6n-3 proportions in liver triglycerides and phospholipids. At the age of 3 months, obese rats, both males and females, compared with control animals, had higher VLDL and hepatic lipids with reduced C20:4n-6 levels and polyunsaturated/saturated fatty acids ratios in hepatic and VLDL triglycerides and phospholipids. DISCUSSION: Fetal obesity, associated with alterations in VLDL lipid fatty acid composition, represents an important risk factor for adult obesity and diabetes.  相似文献

BACKGROUND/OBJECTIVESThe aim of this study was to estimate average total fat and fatty acid intakes as well as identify major food sources using data from the Korea National Health and Nutrition Examination Survey (KNHANES) VI-1 (2013).SUBJECTS/METHODSTotal fat and fatty acid intakes were estimated using 24-hour dietary recall data on 7,048 participants aged ≥ 3 years from the KNHANES VI-1 (2013). Data included total fat, saturated fatty acid (SFA), monounsaturated fatty acid (MUFA), polyunsaturated fatty acid (PUFA), n-3 fatty acid (n-3 FA), and n-6 fatty acid (n-6 FA) levels. Population means and standard errors of the mean were weighted in order to produce national estimates and separated based on sex, age, income, as well as residential region. Major food sources of fat, SFA, MUFA, PUFA, n-3 FA, and n-6 FA were identified based on mean consumption amounts of fat and fatty acids in each food.RESULTSThe mean intake of total fat was 48.0 g while mean intakes of SFA, MUFA, PUFA, n-3 FA, and n-6 FA were 14.4 g, 15.3 g, 11.6 g, 1.6 g, and 10.1 g, respectively. Intakes of MUFA and SFA were each higher than that of PUFA in all age groups. Pork was the major source of total fat, SFA, and MUFA, and soybean oil was the major source of PUFA. Milk and pork were major sources of SFA in subjects aged 3-11 years and ≥ 12 years, respectively. Perilla seed oil and soybean oil were main sources of n-3 FA in subjects aged ≥ 50 years and aged < 50 years, respectively.CONCLUSIONSEstimation of mean fatty acid intakes of this study using nationally represented samples of the Korean population could be useful for developing and evaluating national nutritional policies.  相似文献

Tap water consumption was estimated from 3 day weighed dietary records in 102 Canadian preschool children (4-5 yr of age; 58 males, 44 females). Cold tap water samples were also collected from each child's household (64 hard water households, 38 soft water households) and analyzed for calcium, magnesium, sodium, zinc, copper, and sodium by atomic absorption spectrophotometry. Median consumption of tap water consumed alone and tapwater alone plus that used in beverages (ml per day) was 36.5 (range 0-791) and 171.5 (range 0-1036), respectively. Average intakes of macrominerals for males (M) and females (F) from all sources of hard tap water were (mg/day): calcium (M) 16.5, (F) 13.2; magnesium (M) 6.6, (F) 4.5; and sodium (M) 2.3, (F) 2.3. Average intakes of macrominerals from soft water are as follows: calcium (M) 0.1, (F) 0.1; magnesium (M) 0, (F) 0; and sodium (M) 31.0, (F) 24.4. Trace element intakes from tap water were negligible. Hard tap water provided less than 8% of the Canadian Recommended Nutrient Intake (RNI) for magnesium, less than 3% for calcium, and less than 1% for zinc. Mineral contributions of soft tap water to the RNIs were less than 2%.  相似文献

OBJECTIVE: To examine the serum fatty acid and lipid profiles and dietary intake of Hong Kong Chinese omnivores and vegetarians with respect to cardiovascular health. DESIGN: Random population survey stratified by age and sex. SUBJECTS: One-hundred and ninety-four omnivore subjects (81 men, 113 women) age 25-70 y, and 60 ovo-lacto-vegetarian adults (15 men, 45 women) age 30-55 y. MEASUREMENTS: Nutrient quantitation was by a food frequency method. Serum fatty acids were analysed by gas chromatography, and serum lipid by standard laboratory methods. RESULTS: Compared with omnivores, vegetarians had higher serum concentrations of polyunsaturated (PUFA) and monosaturated fatty acids (MUFA), and lower saturated fatty acids (SFA), long chain omega-3 and trans fatty acids (TFA). They also had lower serum cholesterol and higher apoA-1 concentrations, but the LDL/HDL ratio was not different. The ratio of polyunsaturated to saturated fatty acids intake was higher in vegetarians. Compared with results from populations with higher incidences of coronary heart disease, while lower myristic and palmitic acid concentrations and higher eicosapentaneoic (EPA) and docosahexanoic acid (DHA) may partly account for the difference in incidence, linoleic acid concentration was higher. Although the Chinese vegetarian diet may be beneficial for heart health in that antioxidant and fibre intakes are higher and saturated fat lower, the low EPA and DHA due to omission from dietary source and suppressed formation by high linoleic acid level, and the presence of TFA in the diet, may exert an opposite effect. CONCLUSION: There are some favourable features in the serum fatty acid profile in the Hong Kong Chinese population with respect to cardiovascular health, but the consumption of TFA is of concern. The Chinese vegetarian diet also contains some adverse features.  相似文献

This study was designed to investigate the effects of three diets with different levels of trans fatty acids and the physiologic status on the physicochemical properties and enzymatic activities of liver microsomes and mitochondria. Three groups of 10 female weaning rats each were fed for 10 wk one of three diets differing in their trans fatty acid contents (Control, 0 mol/100 mol total fatty acids; high, 14.5 mol/100 mol; very high, 30 mol/100 mol). At the onset of adult life (10 wk of age), they were mated. Six rats in each group were killed at the end of gestation (Pregnant rat groups). The four remaining pregnant rats continued to receive their experimental diets until weaning of their litters. Six pups from the litters for each group (3 males and 3 females) were selected and fed the same experimental diet as the dams from wk 3 to 10 of age (2nd generation virgin groups) and then killed. Trans fatty acid levels in liver microsomes and mitochondria rose in parallel with the dietary trans fatty acid content, whereas saturated fatty acids dropped in both organelles with increasing trans fatty acids. Pregnant and 2nd generation adult rats fed trans isomers also had lower levels of cholesterol and a lower cholesterol/phosphorus ratio in their liver microsomes compared with controls. A significant interaction between diet and pregnancy was detected in the activities of delta6-desaturase and glucose-6-phosphatase in liver microsomes. Dietary trans fatty acids decreased the activities of both enzymes but only in pregnant rats. No differences in the fluorescence anisotropy of membranes or the enzymatic activities in liver mitochondria were observed. In conclusion, dietary trans fatty acids significantly lowered cholesterol and the cholesterol/phosphorus ratio in liver microsomes. This study characterized the fatty acid intake pattern and the contribution of different food groups to the fatty acid intake of Americans using the U.S. Department of Agriculture's 1987–1988 Nationwide Food Consumption Survey. The fatty acid intake was estimated using three-day food consumption data for children age 6–11 and for males and females age 12–19, 20–39 and 40 and older. Palmitic acid was the predominant saturated fatty acid (SFA) in the diet for all age sex groups, contributing 52–57% of SFA intake. Oleic acid was the primary monounsaturated fatty acid (MUFA) for all age sex groups, comprising 91–95% of MUFA intake. Linoleic acid was the principle polyunsaturated fatty acid (PUFA) for all age sex groups, contributing 87–92% of PUFA intake. The Milk and Milk Products group was the major contributor of the short chain SFA and lauric and myristic acids. Meat, Poultry and Meat Mixtures were the main sources of palmitic and stearic acids. Grain Products contributed appreciably to the long chain SFA intake. Oleic acid was obtained mainly from Meat, Poultry, Fish and Mixtures. Yeast breads, rolls, cakes, cookies and pastries were the main contributors of linoleic acid intake. A variety of animal and vegetable products contributed to the linolenic acid and C18:4+20:4 intake, while fish and shellfish were the main sources of C20:5+22:6 fatty acids. The contribution of the various food groups to intake of individual fatty acids was similar for both males and females. The results of the present study indicate that a wide variety of food groups contribute to the total fat intake Americans.  相似文献
