目的对市售桶装植物油中脂肪酸进行分析,探讨其组分及含量特点。通过植物油中各类脂肪酸比例的特点,分析脂肪酸特征。方法从北京、云南、浙江、湖南、河南、哈尔滨、江苏、甘肃8个地区,选取市场普遍销售的或各地自产的品牌桶装植物油,共计8个品种,每个样品采集2个不同批号。对植物油脂进行皂化和甲酯化后,利用岛津GC2014气相色谱仪对样品进行气相色谱分析。结果市售桶装植物油主要以棕榈酸、油酸、亚油酸和α-亚麻酸为主,反式脂肪酸的平均含量为1.05g/100g。植物油的饱和脂肪酸∶单不饱和脂肪酸∶多不饱和脂肪酸的比值范围为1∶1.6~9.4∶0.9~7.4;多不饱和脂肪酸中n-6/n-3的比值范围为0.37~289.5∶1。结论市售桶装植物油反式脂肪酸含量低,但脂肪酸组成比例大多不符合中国营养学会提出的标准,并且多数缺乏n-3多不饱和脂肪酸。  相似文献

OBJECTIVE: Our laboratory has previously reported that the hypolipidemic effect of rice bran oil (RBO) is not entirely explained by its fatty acid composition. Although RBO has up to three times more serum cholesterol-raising saturated fatty acids (SATS) than some unsaturated vegetable oils, we hypothesized that its greater content of the unsaponifiables would compensate for its high SATS and yield comparable cholesterol-lowering properties to other vegetable oils with less SATS. METHODS: To study the comparative effects of different unsaturated vegetable oils on serum lipoprotein levels, nine cynomologus monkeys (Macaca fascicularis) were fed diets, for four weeks, in a Latin square design, containing rice bran, canola or corn oils (as 20% of energy) in a basal mixture of other fats to yield a final dietary fat concentration of 30% of energy. All animals were fed a baseline diet containing 36% of energy as fat with 15% SATS, 15% monounsaturated fatty acids (MONOS) and 6% polyunsaturated fatty acids (POLYS). RESULTS: Despite the lower SATS and higher MONOS content of canola oil and the higher POLYS content of corn oil, RBO produced similar reductions in serum total cholesterol (TC) (-25%) and low density lipoprotein cholesterol (LDL-C) (-30%). In addition, as compared to the baseline diet, the reduction in serum TC and LDL-C cholesterol with RBO was not accompanied by reductions in high density lipoprotein cholesterol (HDL-C) which occurred with the other two dietary oils. Using predictive equations developed from data gathered from several studies with non-human primates, we noted that the observed serum TC and LDL-C lowering capabilities of the RBO diet were in excess of those predicted based on the fatty acid composition of RBO. CONCLUSIONS: These studies suggest that non-fatty acid components (unsaponifiables) of RBO can contribute significantly to its cholesterol-lowering capability.  相似文献

目的:分析苦荞油、甜荞油中脂肪酸和不皂化物的构成及差异,寻找荞麦降脂功能成分。方法: 将样品用碱法皂化,酸法提取获得脂肪酸,采用气相色谱和气-质联用色谱对苦荞和甜荞油中的脂肪酸和甾醇、烃、三萜醇等不皂化物成分进行含量测定。结果: 苦荞油、甜荞油不饱和脂肪酸含量分别为83.2%和81.8%,其中苦荞油中含油酸47.1%,含亚油酸36.1%; 甜荞油中含油酸35.8%,含亚油酸40.2%,含亚麻酸5.8%。苦荞油、甜荞油中不皂化物分别占总脂肪含量的6.56%和21.90%,苦荞油含β-谷甾醇54.37%,甜荞油含β-谷甾醇57.29%,在苦荞中还含有1.41%的β-生育酚。结论: 荞麦油是一类具有保健功能潜力的植物油。  相似文献

Evidence indicates that dietary trans fatty acids (TFA) obtained from partially hydrogenated vegetable oils (PHVO) increase the risk of coronary heart disease (CHD). Studies have implicated TFA in increasing the risk and incidence of diabetes. Furthermore, TFA may compromise fetal and early infant growth and development. In rats, partial substitution of either linoleic acid (18:2 n-6) with saturated fatty acids (SFA, 6 en %) or SFA with TFA (3 en % from vanaspati) decreased peripheral insulin sensitivity, but these effects were greater in TFA group. Since a large proportion of Indian population is insulin resistant, the TFA content in Indian edible fats/oils and foods should be reduced. Vanaspati (PHVO) provides up to 40% TFA, is used in Indian cooking and in the preparation of commercially fried, processed, bakery, ready-to-eat and street foods. TFA in biscuits and sweets range 30-40 and 6-26% of total fatty acids respectively. There is no regulation on TFA content in vanaspati, bakery fats and shortenings. Reduction in Indian edible fats/ oils and foods can be achieved by: a) specifying limits of TFA in vanaspati, bakery fats and shortenings by upgrading technology; b) advocating the substitution of natural plant oils containing lower percent of polyunsaturated fatty acids for PHVO. Indian edible oil industry needs to develop and adopt alternative technologies to produce zero TFA. Consumer education about negative health effects of TFA and providing food based guidelines to reduce TFA consumption in the entire population need to be actively pursued.  相似文献

Since many connections exist between vitamin B6 and lipid metabolism, we aim to investigate the lipemic effect of different dietary intakes of polyunsaturated fatty acids in rats fed a vitamin B6 deficient diet. Diets were either vitamin B6 deficient (-B6) or vitamin B6 sufficient, pair-fed to the deficient group (PF) and ad libitum (N). The diets were combined with normal lipid (LC: soya bean-coconut-palm oils) and fish oil (FO: soya bean-fish oil). The fish oil diet with sufficient vitamin B6 content caused an increase in n-3 long chain polyunsaturated fatty acids and a decrease in arachidonic acid. In the -B6 group fed a normal lipid diet, the arachidonic acid percentage decreased and the linoleic acid percentage increased; in the -B6 group fed fish oil these changes in fatty acid composition, already consequent upon dietary intake of n-3 long chain polyunsaturated fatty acids, did not show further variations. In the dietary condition of vitamin B6 deficiency, plasma cholesterol content increased in rats fed a lipid control diet, whereas no hypocholesterolemic effect was observed in those fed a fish oil diet. Plasma triglyceride contents were not influenced by dietary lipid quality because, in all conditions, the lower food intake of the PF groups caused a decrease and vitamin B6 deficiency caused an elevation in triglyceride contents which reached those of the ad libitum groups. The study highlights the interaction between vitamin B6 and polyunsaturated fatty acids and the opportunity of dietary intake of fish oil to counterbalance some effects of vitamin B6 deficiency.  相似文献

We studied the digestion of fat and fatty acids in diets containing oils with different fatty acid composition. Four barrows (initial weight 35 kg) were fitted with a simple T-cannula at the terminal ileum. Three wheat starch and fish meal-based diets were formulated to contain either 150 g fish oil, rapeseed oil or coconut oil/kg. A basal diet, which did not contain oil, was also prepared. The diets were fed according to a 4 x 4 Latin square design. Each experimental period comprised 5 d adaptation to the diets, 3 d fecal collection and 2 d digesta collection. The apparent ileal and fecal digestibilities of fat were relatively high (88 - 93%). The ileal digestibilities of total, saturated and monounsaturated fatty acids did not differ among the diets. However, the digestibilities of polyunsaturated fatty acids (PUFA) in the fish and rapeseed oil diets were higher (P < 0.05) than in the coconut oil diet. The ileal digestibilities of 18:1, 18:2 and 18:3 in the rapeseed oil diet ranged from 94 to 97%. The ileal digestion of the unsaturated long-chain fatty acids 20:5(n-3) and 22:6(n-3) in the fish oil diet was nearly complete (97 - 98%). Apparent fecal digestibilities of saturated fatty acids (76 - 89%) were lower than apparent ileal digestibilities (89 - 94%). The digestibilities of fat and fatty acids were relatively high when pigs were fed diets containing fish oil, rapeseed oil or coconut oil. There were few differences in the digestibilities of saturated, monounsaturated and PUFA in the fish oil, rapeseed oil or coconut oil diets.  相似文献

Palm oil and soybean oil are the 2 most widely used cooking oils in the world. Palm oil is consumed mainly in developing countries, where morbidity and mortality due to cardiovascular disease (CVD) are on the rise. Although claims about adverse or protective effects of these oils are commonly made, there are no epidemiologic studies assessing the association between these oils and cardiovascular disease endpoints. We examined whether consumption of palm oil relative to soybean oil and other unsaturated oils (predominantly sunflower) is associated with myocardial infarction (MI) in Costa Rica. The cases (n = 2111) were survivors of a first acute MI and were matched to randomly selected population controls (n = 2111). Dietary intake was assessed with a validated semiquantitative FFQ. Adipose tissue profiles of essential fatty acids were assessed to validate cooking oil intake and found to be consistent with self-reported major oils used for cooking. The data were analyzed using conditional logistic regression. Palm oil users were more likely to have an MI than users of soybean oil [odds ratio (OR) = 1.33; 95% CI: 1.08-1.63] or other cooking oils (OR = 1.23; CI: 0.99-1.52), but they did not differ from users of soybean oil with a high trans-fatty acid content (OR = 1.14; CI: 0.84-1.56). These data suggest that as currently used in Costa Rica, and most likely in many other developing countries, the replacement of palm oil with a polyunsaturated nonhydrogenated vegetable oil would reduce the risk of MI.  相似文献

The objective of this work was to examine the mechanism by which dietary saturated fatty acids, as compared with polyunsaturated fatty acids, lower hormone-sensitive lipolysis in rat adipocytes. Rats were fed a purified diet containing 14% of a fat with a high concentration of either saturated fatty acids (coconut oil or beef fat) or polyunsaturated fatty acids (safflower oil) as a control. In addition, each diet contained 2% corn oil. The animals were fed these diets for 4 wk. Norepinephrine-stimulated lipolysis was 50% lower when diets rich in saturated fatty acids, regardless of their chain length, were fed than when a diet containing a high concentration of polyunsaturated fatty acids was fed. The specific activities of adenylate cyclase, 3',5'-cyclic nucleotide (cAMP) phosphodiesterase and hormone-sensitive lipase were lower when saturated fatty acids were fed than when polyunsaturated fatty acids were fed. Accumulation of cAMP upon stimulation with 10(-5) M norepinephrine was lower when saturated fatty acids were fed than when polyunsaturated fatty acids were fed. Moreover, adipocytes were larger when saturated fatty acids were fed than when polyunsaturated fatty acids were fed. The data obtained suggest that dietary saturated fats exert their inhibitory effect on hormone-stimulated lipolysis by influencing several points in the lipolytic cascade.  相似文献

The aim of this work was the examination of the quality of 17 different vegetable oils (13 refined and 4 extra virgin olive oils) available on the domestic market. The quality of oils was expressed by the following factors: conformity of fatty acid composition that as declared by manufacturer, content of oxidation products (PV, AnV, Totox), content of free fatty acids (LK) and oxidative stability. It was found that 40% of oils did not comply with the requirements concerning oxidative stability. The fatty acid composition of only 1 oil out of 17 investigated did not comply with the declaration by manufacturer. The oxidative stabilities of extra vergin olive oils: 6.44-8.24 hrs., were considerably higher that of other refined oils 2.34 to 8.24 hrs.  相似文献

BACKGROUND: Animal studies showed that dietary flaxseed oil [rich in the n-3 polyunsaturated fatty acid alpha-linolenic acid (ALA)], evening primrose oil [rich in the n-6 polyunsaturated fatty acid gamma-linolenic acid (GLA)], and fish oil [rich in the long-chain n-3 polyunsaturated fatty acids eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA)] can decrease natural killer (NK) cell activity. There have been no studies of the effect on NK cell activity of adding these oils to the diet of humans. OBJECTIVE: Our objective was to determine the effect of dietary supplementation with oil blends rich in ALA, GLA, arachidonic acid (AA), DHA, or EPA plus DHA (fish oil) on the NK cell activity of human peripheral blood mononuclear cells. DESIGN: A randomized, placebo-controlled, double-blind, parallel study was conducted. Healthy subjects aged 55-75 y consumed 9 capsules/d for 12 wk; the capsules contained placebo oil (an 80:20 mix of palm and sunflower seed oils) or blends of placebo oil and oils rich in ALA, GLA, AA, DHA, or EPA plus DHA. Subjects in these groups consumed 2 g ALA, 770 mg GLA, 680 mg AA, 720 mg DHA, or 1 g EPA plus DHA (720 mg EPA + 280 mg DHA) daily, respectively. Total fat intake from the capsules was 4 g/d. RESULTS: The fatty acid composition of plasma phospholipids changed significantly in the GLA, AA, DHA, and fish oil groups. NK cell activity was not significantly affected by the placebo, ALA, GLA, AA, or DHA treatment. Fish oil caused a significant reduction (mean decline: 48%) in NK cell activity that was fully reversed by 4 wk after supplementation had ceased. CONCLUSION: A moderate amount of EPA but not of other n-6 or n-3 polyunsaturated fatty acids can decrease NK cell activity in healthy subjects.  相似文献

Binding of rat high-density lipoprotein (HDL) to adipocyte plasma membranes appears to be mediated by specific protein-recognition sites, but membrane lipids may also affect these interactions. To study the effect of dietary fatty acid composition on adipocyte-membrane phospholipid composition and HDL binding, male Wistar rats (250 +/- 10 g) were fed diets high in polyunsaturated (20% wt:wt sunflowerseed oil) or saturated and monounsaturated fatty acids (20% lard, by weight). Sunflower-oil vs lard feeding significantly increased the polyunsaturated fatty acid content of membrane diacylglycerophospholipids and the (22:0 and 24:0) content of long-chain fatty acids of sphingomyelin (p less than 0.05) from epididymal and perirenal adipocyte plasma membranes. Concomitant with these changes in membrane phospholipid composition, sunflower-oil vs lard treatment significantly increased the maximum binding capacity (Bmax) of 125I-labeled HDL2 (p less than 0.05). These results show that feeding polyunsaturated fatty acids enhanced HDL2 Bmax of adipocyte plasma membranes, possibly as a consequence of altering the fatty acid composition of membrane phospholipids.  相似文献

目的 了解德阳市市售植物油中反式脂肪酸的含量范围。方法 利用分层随机抽样抽取12类德阳市市售植物油共计121份样品,应用气相色谱法对样品中反式脂肪酸进行分离检测,采用归一化法进行结果计算。结果 德阳市市售植物油中12种反式脂肪酸的含量范围为未检出至3.19%,以反式亚麻酸(C18:3T)为主,其中橄榄油未检测出反式脂肪酸,最常见的菜籽油、玉米油、调和油、大豆油的反式脂肪酸平均含量分别为1.64%、2.20%、1.75%、2.58%。结论 德阳市市售植物油中普遍存在反式脂肪酸且含量各不相同。  相似文献

目的: 研究脂肪酸组成对甲基亚硝基脲( M N U) 诱导的大鼠结肠等肿瘤生成的影响。方法: 雄性 S D 大鼠喂以用牛油、豆油、紫草油、玉米油和鱼油按不同比例调配,含脂肪量为15 % 的半合成饲料,分5 组。各组脂肪酸组成为:1 组以牛油为主富含饱和脂肪酸;2 组以豆油为主富含亚油酸,1 组和2 组基本不含有n 3 系列多不饱和脂肪酸;3 组以紫草油为主富含亚油酸,α和γ亚麻酸,n 6/n 3 脂肪酸之比为4 .53 ;4 组以鱼油为主富含n 3 系列多不饱和脂肪酸,n 6/n 3 脂肪酸之比为0 .73 ;5 组为混合油组,n 6/n 3 脂肪酸之比为1 .95 。对照组和实验组分别经腹腔注射磷酸盐生理盐水缓冲液和30 mg/kg .bw 的 M N U,每周一次,共6 次,喂养180 天。实验期控制了影响肿瘤产生的因素。结果:1 、2 和3 组产生的结肠肿瘤均显著高于4组( P< 0 .05) ,也相对高于5 组( P> 0 .05) ;1 、2 、3 和5 组产生的胃肿瘤也相对地高于4 组,但是,各组之间无显著的统计学差异。除了4 组和1 组外,其它各组在其它部位也产生了肿瘤。结论:  M N U 能诱导喂以不同脂肪酸组成的大鼠产生以结肠癌为主的癌症;饲?  相似文献

OBJECTIVE: The objective of this study was to compare the effects of dietary monounsaturated fatty acids (MUFA), n-6 and n-3 polyunsaturated fatty acids (PUFA) on LDL composition and oxidizability. DESIGN, SETTING AND SUBJECTS: Sixty-nine healthy young volunteers, students at a nearby college, were included. Six subjects withdrew because of intercurrent illness and five withdrew because they were unable to comply with the dietary regimen. INTERVENTIONS: The participants received a 2-week wash-in diet rich in saturated fatty acids (SFA) followed by diets rich in refined olive oil, rapeseed oil or sunflower oil for 4 weeks. Intakes of vitamin E and other antioxidants did not differ significantly between the diets. RESULTS: At the end of the study, LDL oxidizability was lowest in the olive oil group (lag time: 72.6 min), intermediate in the rapeseed oil group (68.2 min) and highest in the sunflower oil group (60.4 min, P<0.05 for comparison of all three groups). Despite wide variations in SFA intake, the SFA content of LDL was not statistically different between the four diets (25.8-28.5% of LDL fatty acids). By contrast, the PUFA (43.5%-60.5% of LDL fatty acids) and MUFA content of LDL (13.7-29.1% of LDL fatty acids) showed a wider variability dependent on diet. CONCLUSIONS: Enrichment of LDL with MUFA reduces LDL susceptibility to oxidation. As seen on the rapeseed oil diet this effect is independent of a displacement of higher unsaturated fatty acids from LDL. Evidence from this diet also suggests that highly unsaturated n-3 fatty acids in moderate amounts do not increase LDL oxidizability when provided in the context of a diet rich in MUFA.  相似文献

The aim of this study was to examine the effects of perilla oil as well as several vegetable oils, including flaxseed oil, canola oil, and rice bran oil on plasma levels of cardioprotective (n-3) polyunsaturated fatty acids in mice by feeding each vegetable oil for a period of eight weeks. Concentrations of docosapentaenoic acid (DHA) and eicosapentaenoic acid (EPA), fish-based (n-3) polyunsaturated fatty acids, showed an increase in the plasma of mice fed perilla and flaxseed oils compared to those of mice in the control group (P < 0.05), whereas rice bran and canola oils did not alter plasma DPA and EPA concentrations. Arachidonic acid concentration was increased by feeding rice bran oil (P < 0.05), but not canola, flaxseed, or perilla oil. In addition, oleic acid, linoleic acid, and docosahexaenoic acid concentrations were altered by feeding dietary rice bran, canola, perilla, and flaxseed oils. Findings of this study showed that perilla oil, similar to flaxseed oil, is cardioprotective and could be used as an alternative to fish oil or even flaxseed oil in animal models.  相似文献

OBJECTIVE: To describe the relative contribution of 10 created food groups to total fat intake in middle-aged subjects. The relationship of added oil and fat intake with region of residence and educational level was also assessed. DESIGN: Cross-sectional study. SUBJECTS/SETTING: Participants of the French Supplémentation en Vitamines et Minéraux Antioxydants study who completed at least six 24-hour dietary records after inclusion into the study (N=6,572). RESULTS: Added oils and fats were the main source of total fat intake. Animal fat and margarine intakes showed a significant inverse association with educational level, whereas oils with monounsaturated fatty acids (MUFA) were positively associated with education level. Animal fat intake was significantly higher in the western and northern parts of France (54.2% and 50.4%) and lower in the Mediterranean Coast (39.0%). A significant inverse gradient was found with oils with polyunsaturated fatty acids or MUFA in the southwest and the Mediterranean Coast compared with the northern part of France. CONCLUSIONS: We showed a north to south gradient for animal fat intake and the opposite for oils with MUFA and polyunsaturated fatty acid in France. This gradient parallels the known disparities for cardiovascular mortality in this country. This should contribute to adapting dietary guidelines for dietary change in a public health perspective.  相似文献

The influence of safflower oil supplemented (5%) diet both on cholesterol level and on lipid fatty acid composition was investigated in serum, liver and muscle (Longissimus dorsi) of lambs. The fatty acid pattern varied similarly in all the three tissues. An increase in linoleic acid and in some other polyunsaturated fatty acids, and a simultaneous reduction of the saturated fatty acids (mostly palmitic and stearic acid) were observed. On the contrary, cholesterol content decreased notably (44%) in the liver, with a much less evident decrease in serum and muscle of treated animals.  相似文献

Bolti (Tilapia nilotica) fish and water samples were taken from three different locations in Kafr El-Sheikh governorate. Water quality and oil characteristics in fish flesh were studied. The obtained results showed that crude lipid and phospholipid contents of fish fillet were increased by increasing total solids and total hardness of fish environment. Peroxide, iodine and acid values of fish oil influenced by water quality. Fatty acids composition in fish oil showed a wide variation due to differences in water-head. Total unsaturated fatty acids in drainage fish oil were higher than that found in farm's fish oil, while the lowest percentage of unsaturated fatty acids was recorded by Nile's fish oil. Generally, palmitic was the main saturated fatty acid in fish oil, whereas it constituted about 66-68% of the total saturated fatty acids. Nile's fish oil contained higher amounts of omega-3 fatty acids than those of drainage and farm's fish oils. In contrast, odd and branched fatty acids content in drainage and farm's fish oils were higher than those found in Nile's fish oil. Concentrations of arachidonic and erucic acids in oil extracted from drainage fish were higher than oil extracted from farm's fish, while the lowest concentration for these fatty acids were found in oil extracted from Nile's fish. Although the acid value and peroxide value of drainage and farm's fish oils were slightly high, it is still accepted for human consumption according to The Association of Fish Meal Manufacturers.  相似文献

At the industrial scale, the major source of olive oil deterioration is the poor handling of the raw material during the time separating harvesting from processing. The objective of this work was to verify the effect of modified atmospheres and cold storage in relation to quality parameters of the extracted oils. Olives (cv Chétoui) intended for oil extraction, were stored for 21 days at two different temperatures (ambient temperature 14?±?2?°C and 5?°C) and under two different modified atmospheres 21% O? - 0% CO? and 2% O? - 5% CO?. Oils quality was ascertained with analytical parameters: free fatty acids, peroxide value, K???, K??? as suggested by European regulation. Oxidative stability, total phenols content, radical scavenging activity and fatty acids composition were carried out in order to measure the hydrolytic and oxidative degradation of oils. Olive oils quality parameters were significantly affected by treatments with especially a beneficial effect on primary oxidation indicators and free acidity. Most efficient treatments, with regard to oils phenolic content and involved parameters, were 21% O? - 0% CO? at ambient temperature (636.25?mg ca/kg) and 2% O? - 5% CO? under 5?°C (637.50?mg ca/kg). Those two treatments improved individually oil samples phenolic content of 25% but not at the same storage period.  相似文献
