2011 - 2017年广西水产品致病性弧菌监测结果分析

摘    要:目的 了解广西水产品副溶血性弧菌、创伤弧菌、溶藻弧菌和霍乱弧菌4种致病性弧菌的污染现状,为食品安全风险评估和食源性疾病防控提供技术依据。方法 根据2011 - 2017年分年度的《广西食品安全风险监测工作方案》,在广西各地采集各类水产品监测并对结果进行描述性统计分析。结果 2011 - 2017年6 278份水产品检测结果显示,阳性1 685份,阳性率为26.84%;副溶血性弧菌、创伤弧菌、溶藻弧菌和霍乱弧菌阳性率分别为25.87%、9.19%、0.73%和0.14%。各年度阳性率波动较大,贝类样品所占比例较大的年份阳性率相对较高;鱼生类生食/半生食水产品副溶血性弧菌和创伤弧菌阳性率分别高达21.14%和7.26%。副溶血性弧菌以贝类和泥丁、沙虫阳性率最高,分别为53.94%和53.85%,其次为虾类(35.83%)和蟹类(33.54%);创伤弧菌以泥丁、沙虫类阳性率最高,为27.78%,其次为虾类(14.52%)和贝类(14.13%),蟹类阳性率(0.65%)最低。沿海地区、城市地区、批发市场/收购环节、农贸市场和大、中、小型餐馆采集的样品总体阳性率相对较高。结论 广西水产品副溶血性弧菌和创伤弧菌污染较为常见,尤其是泥丁、沙虫、贝类和虾类,生食/半生食水产品阳性率也较高,需要警惕食用未煮熟煮透的泥丁、沙虫、贝类、虾类或生食/半生食水产品引起副溶血性弧菌和创伤弧菌感染的风险,特别是城市地区和餐馆消费者。

Contamination of pathogenic vibrio in aquatic products in Guangxi between 2011 and 2017

Abstract:To determine the contamination of Vibrio parahaemolyticus, Vibrio vulnificus, Vibrio alginolyticus and cholera in aquatic products of Guangxi, and provide evidence for food safety risk assessment and foodborne disease control.Methods Aquatic products samples were collected from all counties/districts from 2011 to 2017 following the annual Protocol of Food Safety Monitoring in Guangxi. Descriptive analysis was used in the data analysis. Results 6278 aquatic products samples were tested, among which 1685 were positive. The total positive rate of pathogenic Vibrio was 26.88%. The positive rate of Vibrio parahaemolyticus, Vibrio vulnificus, Vibrio alginolyticus and cholera were 25.87%, 9.19%, 0.73% and 0.14%,respectively. The positive rate was fluctuated by year. Higher positive rate was observed in the year when samples were dominated by shellfish. The positive rate of Vibrio parahaemolyticus and Vibrio vulnificus was high in raw and half raw aquatic products, which was 21.14% and 7.26%, respectively. For the Vibrio parahaemolyticus, shellfish(53.94%), mud ding and sandworm(53.85%) had the highest positive rate, follow by shrimp(35.83%) and crab(33.54%). For the Vibrio vulnificus,Mud Ding and sandworm had the highest positive rate, which was 27.78%. Followed by shrimp(14.52%) and shellfish(14.13%), the positive rate of crab(0.65) was lowest. The total positive rate in coastal areas, urban areas, wholesale market/acquisition link, agricultural market and restaurants was relative high. Conclusion The contamination of Vibrio parahaemolyticus and Vibrio vulnificus in aquatic products was common in Guangxi, especially in mud ding, sandworm,shellfish and shrimp. The positive rate was high in raw and half raw products. The risk of infection by consuming raw/half raw and undercooked aquatic products should be paid attention, especially those consumers in urban areas and restaurants.
