摘    要:目的了解铜陵市市场上售卖食品中食源性致病菌的污染情况,为食源性疾病的监测及防控提供依据。方法2014-2018年采集铜陵市市场上717份样品,按照《国家食品污染物和有害因素风险监测工作手册》中的方法检测。确认为沙门氏菌的菌株进行血清学试验。数据采用SPSS 17.0软件进行统计学分析,采用卡方检验,检验水准α=0.05。结果717份样品中有58份样品中检出致病菌菌株62株,检出率8.09%。2014-2018年食源性致病菌检测的阳性率依次为:6.43%、8.82%、4.67%、2.86%、20.00%,检出率差异具有统计学意义(P<0.001)。检出率位于前3位的致病菌是:创伤弧菌(16.67%,5/30)、副溶血性弧菌(11.96%,11/92)、蜡样芽孢杆菌(8.95%,18/201)。不同类别的食品中,婴幼儿食品、动物性食品(生)、快餐类食品致病菌检出率均>10%。鲜榨果汁、豆制品、食藻类加工食品的的卫生学指标不合格率均在70%以上,其中20份鲜榨果汁卫生学指标均不合格。沙门氏菌的O:4群是本市的优势群。结论创伤弧菌、副溶血性弧菌和蜡样芽孢杆菌的检出率位居前3位。婴幼...

Abstract:Objective To investigate the contamination of foodborne pathogens in food sold in Tongling city, and to provide evidence for the monitoring and prevention of foodborne diseases. Methods From 2014 to 2018, 717 samples were collected from Tongling city market and tested according to the methods in the national manual for risk monitoring of food contaminants and harmful factors. The strain identified as salmonella was tested serologically. SPSS 17.0 software was used for statistical analysis and chi-square test. P<0.05 was considered statistically significant. Results 62 strains of pathogenic bacteria were detected in 58 of the 717 samples, with a detection rate of 8.09%. From 2014 to 2018, the positive rate of foodborne pathogens detection was 6.43%, 8.82%, 4.67%, 2.86% and 20.00%, respectively, and the difference in detection rate was statistically significant(P <0.001). The top three pathogens were vibrio vulnificus(16.67%, 5/30), vibrio parahaemolyticus(11.96%, 11/92), and bacillus cereus(8.95%, 18/201). In different categories of food, infant food, animal food(raw), fast food pathogen detection rate are all over 10%. The sanitary indexes of fresh juice, soybean products and algae-eating processed food were all above 70%, and the sanitary indexes of 20 fresh juice were all unqualified. The O:4 groups of salmonella are the dominant group in this city. Conclusion The detection rates of vibrio vulnificus, vibrio parahaemolyticus and bacillus cereus were the first three. The high detection rate of pathogenic bacteria in infant food, animal food(raw) and fast food(all >10%) indicates that these foods are high-risk food for foodborne diseases in Tongling. The sanitary indexes of fresh juice,soybean products and algae-eating processed food were seriously exceeded.
