摘    要:目的了解目前北京市朝阳区商业区各类别餐饮服务单位在食品安全管理、场所设施、生产经营等方面的现状,分析北京市朝阳区餐饮服务单位目前存在的主要问题及这些问题存在的原因。方法将研究区域内所有餐饮单位作为研究对象进行整群抽样,共抽取1027户餐饮单位最近一次量化评分表共计1027份。对不同类型餐饮服务单位评分情况用单因素方差分析(one-way ANOVA)进行统计分析,使用卡方检验对不同检查内容合格率情况进行分析。结果①不同类别餐饮单位之间评分分布差异有统计学意义(P〈0.01);②8个检查项目的得分差异均有统计学意义(P〈0.05);③不同类别餐饮单位之间,在食品安全制度建立等21个检查内容在合格率差异上有统计学意义(P〈0.05)。结论北京市朝阳区商业区餐饮单位总体量化等级以良好为主,应重点对中小餐饮单位的制度建立与执行、设备设施、采购贮存、添加剂管理等工作加强监督管理。

Abstract:Objective To understand the current situation in the aspects of food safety management,facilities,production,Chao yang District Business District of various categories of food service units,analysis of the causes of existing problems of Chao yang District catering service units, and these problems.Methods Will examine all the catering units in the region as the research objects by cluster sampling,a total of 1027 households were selected from 1027 catering units quantified score table.Using single factor analysis of variance for different types of catering service unit score(one-way ANOVA) for statistical analysis,chi square test was used for analysis of different examination qualified rate.Results ①had statistical significance between the different categories of catering units score distribution difference(P〈0.01);②in the 8 inspection project,scoring the difference had statistical significance(P〈0.05);③among the different types of catering units,food safety system was established in 21 examination content the qualified rate difference was statistically significant(P〈0.05).Conclusion The Chao yang District business district overall quantitative grade catering units in good,should perform,establishment and key system for small and medium-sized catering facilities,procurement,storage additive management work to strengthen the supervision and management.
