重庆地区人群半定量食物频数问卷的研制

摘    要:目的 制订适用于对重庆城乡成年人群进行膳食营养概况分析的半定量食物频数问卷(SQFFQ)。方法 采用3日食物称量法对重庆城、乡成年人群进行膳食调查;采用累积百分贡献率(CA)和多元回归(MRA)两种方法分析35种营养素与食物之间关系,分别选出累积百分贡献率达90%以上或累积R^2达0.90以上的食物进入SQFFQ;进一步合并城市和农村的SQFFQ,制订最终能涵盖重庆城乡的SQFFQ。结果 重庆城市和农村地区人群能量、蛋白质、碳水化合物等主要营养素摄入的差异不显著,但农村人群脂肪摄入明显高于城市人群。在选人合并SQFFQ的119种食物中,78种为城乡共有,22种为城市独有,6种为农村独有。最终制订的SQFFQ的营养素覆盖率有33种在城、乡都达到了90%以上。结论 所制订的SQFFQ能较好地覆盖重庆地区人群的营养谱,但需进一步进行效度和信度研究。

Abstract:Objective To design a semi quantitative food frequency questionnaire (SQFFQ) that covers comprehensive food and nutrient intake for both urban and rural populations in Chongqing. Methods The dietary data were collected with 3 day weighed food records(3 day WFR) in urban and rural areas of Chongqing. We calculated the intake of 35 nutrients according to Standard Food Composition Tables for China. For each nutrient estimated by percentage contribution analysis (CA) and multiple regression analysis (MRA), foods with up to a 90% contribution or a 0.90 cumulative R 2 were selected as items for SQFFQs. The food items of the combined SQFFQ were selected from all items listed in either urban or rural SQFFQs. Results No significant difference in the mean intake of energy, protein and carbohydrate was found between the urban and rural residents. The latter consumed more fat than their urban counterparts. We selected 119 food items for the combined SQFFQ, including 22 specific items for the urban SQFFQ, 6 for the rural, 78 for both and 13 additional items. The combined SQFFQ covered 33 nutrients with up to a 90% contribution in each area. Conclusion The data based SQFFQ should be suitable to cover both urban and rural populations. The reliability and reproducibility tests are needed to be further studied.
