摘    要:目的了解肇庆市食品中沙门氏菌、单增李斯特菌、EHEC O157:H7和副溶血性弧菌的分布状况、动物储存宿主的种类、菌株生物学特点,初步确定可能污染上述致病菌的高危食品,为食物中毒监测提供科学依据。方法依据国标方法,采用进口显色培养基。对样本分别进行沙门氏菌、单增李斯特菌、EHEC O127:H7和副溶血性弧茵分离、生化及血清学鉴定。结果监测生肉(猪、牛、鸡)、熟肉、水产品三类样品共58件,共检出致病菌6株,总检出率10.3%。其中分离沙门氏菌4株,检出率6.9%;单增李斯特菌2株,检出率3.4%:EHEC O157:H7和副溶血性弧菌均未检出。3类食品中致病菌阳性率最高的为生肉(17.9%),其次为水产品(5.0%),熟肉未检出致病菌。结论肇庆市居民主要消费食品存在食源性致病菌污染,其中生肉是主要污染食品品种,生肉(猪肉)中沙门氏菌带菌率较高(30.0%),主要血清型为德尔卑沙门氏菌,熟肉未检出致病菌。

Abstract:Objective To study the distribution and characteristics of Salmonella,Listeria monocytogenes, EHEC O157:H7 and Vibrio phrahaemolyticus in food of Zhaoqing area,to find the food with high risk of contamination by these pathogens, and to provide scientific basis for the supervision of food-born disease. Method Salmonella, Listeria monocytogenes,EHEC O157:H7 and Vibrio phrahaemolyticus were isolated,serotyped and biochemical characterized by the GB methods. Results Totally 58 samples were tested including raw meats,domestic animal dejecta, and aquatic products. Among all samples,6 strains of pathogens were isolated. The overall detectable rate is 10.3%. The strains and detection rates for Salmonella and Listeria monocytogenes are 4(6.9%) and 2(3.4%) ,respectively.No EHEC O157:H7 and Vibrio phrahaemolyticus were detected. The pathogen detection rate of raw meat is the highest (17.9%) and that of aquatic product is the second (5.0%). However, no pathogens were detected from domestic animal dejecta. Conclusion The study demonstrated that the pathogens contamination is existing in the food of Zhaoqing area. The major contaminated food is raw meat. Salmonella was mainly detected from raw poulty (30.0%), and mostly were S.derby. No pathogens were detected in domestic animal dejecta.
