| 摘 要： | 目的了解2010年玉林市食品中食源性致病菌污染状况，确定可能污染致病高危食品，为食品安全监管提供科学依据。方法按照GB4789．3．4．10．30．40—2010、GB／T4789．7．9．36—2008以及《2010年广西食品安全风险监测工作手册》对致病菌分离鉴定以及大肠菌群MPN法计数。结果检测13个品种的食品共104份，其中23份食品检出致病菌，检出率为22．1％。13个品种食品中致病菌检出率前5位分别为鲜冻水产品（63．6％）、生禽肉（50．0％）、婴幼儿配方食品（42．9％）、生畜肉（37．5％）和生食水产品（18．2％）。直接入口食品大肠菌群检测共40份，阳性33份，阳性率为82．5％。结论直接入口食品致病菌污染率高，食品安全执法部门应重点监督，减少食源性疾病的发生。
